Halloween Cupcake

I saw this Halloween cupcake recipe in Yahoo Philippines, which is a good "merienda baon" during Halloween.

Chocolate Cupcake
1 pack butter (225 grams)
2 ½ cups white sugar (460 grams)
4 eggs
1 cup cocoa (100 grams)
1 2/3 cup water (368 grams)
1 tsp vanilla
2 ½ cups flour (284 grams)
1½ teaspoon baking powder (10 gms)
1 teaspoon baking soda (4 grams)
¾ teaspoon salt (4.5 grams)

Marshmallow Fondant (for the topping)

16 ounces white mini marshmallows
2 to 5 tablespoons water
32 ounces powdered sugar, sifted (peotraco or penco are good)
½ cup shortening

image and recipe credit:yahoo.com.ph

Prep work: (1) Melt marshmallows and 2 tablespoons of water in a microwave for 2 minutes. Mix until everything is soft and melted. (2) Put the powdered sugar on the table and make a well in the center, where you will put the marshmallow. (3) Spread shortening on your hands, and start mixing the powdered sugar and melted marshmallows together. Keep mixing till fully incorporated, not forgetting to reapply more shortening on your hands. If the mixture becomes too sticky, just put a bit of shortening on the table while you knead. (4) Let this set overnight before using.

80-20 Principle for Good Health

I would like to share these good health tips which I received from my e-mail inbox. For good health, follow the 80-20 principle.

The 5 elements

The human body is composed of five elements: akasa (ether), vayu (air), agni (fire), jel (water), and pritvi (earth). When kept in balance, the presence and combination of these elements assist the body in its functions. These elements also help the body get rid of toxins.

1. Akasa. Emptiness is power. Ether or, essentially, empty space in the body is created through fasting and prayer. When a person fasts, the emptiness created helps the body remove the accumulated waste in the system. Rev. Dr. Maliekal encourages everyone to fast at least once a week. A person could do this by eating raw vegetables and fruits only, including juices and water; by having less meals than what he normally has in a day; or, if he is ready, by taking in water only. Fasting has some considerations and is ideally done under the close supervision of a naturopath.

2. Vayu. Air is obtained through exercise. Daily exercise like yoga and tai chi is recommended. Rev. Dr. Maliekal also emphasized the importance of wearing light colored clothing made from cotton, as opposed to synthetic materials. “So that the air passes through and the body maintains a connection with the sun, light and the cosmos,” he explains.

3. Agni. The body draws light energy from the sun, so it is important to spend some time in the sun every day. A mild sunbath from 20 to 30 minutes a day is recommended. Exercises, meditation, or prayer can be done during this time. Light cotton clothes are best for these activities.

4. Jel. There are various ways to use water for health: drinking; washing, bathing or cleaning; or by using water as therapy. At Rev. Dr. Maliekal’s Yogashrams, therapeutic baths include the hip bath, spine bath, full bath, mud bath, and steam bath. Massage is also recommended.

5. Pritvi. The earth produces our food. It is important to make sure that our daily diet is composed of 80 percent alkaline, and 20 percent acidic foods. The satvic diet (positive or alkaline diet) is made of vegetables including greens, sprouts, and fruits. The rajasic diet (semi-acid, semi-alkaline) includes cereals, grains, nuts, and seeds. The thamasic diet (or negative diet) is made of food items that are unnecessary, and those that cause sickness. Examples of these acid forming foods are: those cultivated with chemical fertilizers, junk food, sugar and its products, pickles, drinks that contain tannin and caffeine, non-vegetarian foods, carbonated beverages, canned or preserved foods, synthetic food items, and bakery items.

Follow the 80-20 rule at every meal, that is, one part rice for every four parts of veggies. “If you do this every day, you can be perfectly healthy and your illnesses will disappear… that’s all,” Rev. Dr. Maliekal assures everyone.

The right way to eat and drink

Rev. Dr. Maliekal stressed the importance of chewing well, until solid becomes liquid, before swallowing. He also advises against drinking liquids while eating solid food. “Take your liquids half an hour before eating, or one hour after,” he says. When one’s appetite is good, it is best to eat during the day only. At night, liquid food like soup can be taken, or fruit be eaten two hours before sleeping. Incidentally, a fruit (one variety at a time) should be taken alone at a meal, for best results.

When drinking, don’t gulp your drink in but slowly sip it. A person may drink warm or normal temperature water, but never cold drinks because these stop digestion and lead to gassiness. As a general rule, avoid food and drinks that are too hot or too cold.

Rev. Dr. Thomas Maliekal’s Model Diet

6 a.m. – Drink pure water or vegetable juice like cucumber (which could “melt” blocks in arteries, according to Rev. Dr. Maliekal)

6:30 a.m. – Meditation and exercises

8 a.m. – Eat fruits

11 a.m. – Take some vegetable juice, vegetable soup, or coconut water. May be taken with honey, muscovado sugar.

12 nn – Have some rice or wheat bread (1/3) with green leafy vegetables (1/3), and cooked vegetables (1/3). Don’t take fruits with the meal.

2 p.m. – Have a glass of water
4 p.m. – Eat fruits or nuts
6 p.m. – Have cooked veggies, soup, and whole wheat bread
8 p.m. – Have some soup, honey water, or water with lemon juice
9 p.m. – Bedtime

Note: If your produce is not organic, simply clean them by soaking in warm salt water or warm vinegar water from 30 minutes to 1 hour. Then rinse them using clean water.

5 Power Recipes

Daily Drink
Mix vegetable juice (cucumber, zucchini, carrot, etc.) with juice of green, leafy vegetable (mint, parsley, malunggay, pechay, spinach, oregano, basil, etc.). Experiment with the combinations to get the taste you want.

Peanut Milk
Mix peanut and water in a blender. Great for growing children. You can also add some coconut milk.

Daily Dessert
Mix papaya, coconut milk, and muscovado sugar in a blender. You may also use honey instead of muscovado, and add raisins or other fruits.

Mango Chutney
Mix mango, raw coconut (firm), greens, salt, onion, and chili. You may also fry the coconut to get a variation in taste.

Best Salad
Mix orange slices with shredded coconut and muscovado sugar. You may also add/substitute papaya, grapes, or other fruits.

Halo-Halo- Max's Restaurant

Since it's my birthday, and I miss halo-halo, I bought one from Max's Restaurant well of course aside from Max's Chicken where the restaurant is known for.

Halo-halo (from Tagalog word halò, "mix") is a popular Filipino dessert that is a mixture ofshaved ice and evaporated milk to which are added various boiled sweet beans and fruits, and served in a tall glass or bowl.

Ingredients include boiled kidney beans, garbanzos, sugar palm fruit (kaong), coconut sport(macapuno), and plantains caramelized in sugar, jackfruit (langkâ), gulaman, tapioca or sago, nata de coco, sweet potato (kamote), pounded crushed young rice (pinipig). In terms of arrangement, most of the ingredients (fruits, beans, and other sweets) are first placed inside the tall glass, followed by the shaved ice. This is then sprinkled with sugar, and topped with either (or a combination of) leche flan, purple yam (ube halaya), or ice cream. Evaporated milk is poured into the mixture upon serving.

Max's Restaurant's beginnings started in 1945, after World War II. Maximo Gimenez, a Stanford - educated teacher, befriended the American occupation troops stationed at Quezon City. Because of this friendship, the soldiers regularly visited Maximo's nearby home for a drink or two. Later on, the troops insisted that they pay for their drinks. This prompted Maximo to open a cafe; where the troops could enjoy food and drinks.

And here's the main dish:

World Food Day 2011- Happy Healthy Eating

World Food Day is celebrated every year around the world on 16 October in honor of the date of the founding of the Food and Agriculture Organization of the United Nations in 1945. It is also the Food Engineer day.

The World Food Day theme for 2011 is "Food prices - from crisis to stability".

World Food Day (WFD) was established by FAO's Member Countries at the Organization's 20th General Conference in November 1979. The Hungarian Delegation, led by the former Hungarian Minister of Agriculture and Food, Dr. Pál Romány has played an active role at the 20th Session of the FAO Conference and suggested the idea of celebrating the WFD worldwide. It has since been observed every year in more than 150 countries, raising awareness of the issues behind poverty and hunger. source:wikipedia

EGG BENEDICT- Idol sa Kusina Recipe

Here's Idol sa Kusina Recipe for EPISODE 15 / Oct.9- EGG BENEDICT.

Idol sa Kusina Recipe
image and recipe credit:idolsakusina

Ingredients:
For the Hollandaise sauce:
3 pcs. Large egg yolks
1 tbsp. Lemon juice
2 tsp. Salt
5 drops Tabasco sauce
8 tbsp. Butter 1 mini baguette, halved lengthwise
8 slice Bacon, cooked until crispy
4 pcs. Eggs
Pepper to taste

Procedure:
1. Make the hollandaise sauce: drop egg yolk into a blender. Add lemon juice, salt and Tabasco. Pulse for 5 seconds; set aside.
2. Slice butter into chunks and place in a microwave- safe cup. Set microwave on high and melt butter, about 1 minute.
3. While blending the egg yolk mixture on a low setting, slowly drizzle in melted butter. If you do this correctly, the mixture should thicken and take on a creamy consistency. Pour the mixture into a cup or gravy boat and set aside.
4. Fill a large pan with water and set stove at high heat.
5. Toast both halves of the mini baguette. Set on a plate; top each half with 4 slices of bacon.
6. Poach the eggs: Crack three eggs into the boiling water. Cook until eggs turn white; remove with a slotted spoon and set on top of the bacon slices. (Drain the eggs on a paper towel before setting to keep the sauce from losing its texture.) cover with hollandaise sauce and serve.

Poaching tip: When poaching eggs, add a tablespoon of white vinegar to the boiling water. This imparts a tangy quality to the eggs and can help quicken the cooking process.

Buko Juice- Madonna's Coco Water in Kapuso Mo Jessica Soho

Kapuso Mo Jessica Soho featured Buko Juice or Coco water. According to the report Hollywood singer actress Madonna herself invest $10 million dollars for her buko juice company and no less than Rihanna is endorsing her product and other Hollywood actors and actresses.

“Buko or coconut is grown rampantly in the Philippines. As a matter of fact, the Philippines is the world’s number one grower of coconut. A hardy tree, coconut can withstand the worst typhoons unleashed by Mother Nature and it can grow on just about anything, including water.

Recently, at an airport press conference upon his return from the U.S., President Benigno “P-Noy” Aquino III said that he found out that Americans have discovered the joys of drinking buko juice. “Drinking what they call coco water and what we call buko juice is a growing trend in the US. Because of its nutrients, because it is natural and environment friendly, it is becoming the new natural sports drink in America and is now a hundred-million-dollar industry,” he said.

He then announced that Pepsi-Cola and Vita Coco are going to tap the Philippine coconut industry for the production of coco water. He said that New York-based Vita Coco, in a business venture with Philippine-based Fiesta Coco Equity, had committed $15 million in capital investment.

Vita Coco is being advertised in the U.S. as “the nation’s best-selling coconut water and one of the fastest-growing beverage brands in the U.S.” Vita Coco is currently sold at over 14,000 retailers in the U.S. Therefore, a Vita Coco-Fiesta Coco joint venture would insure the influx of Philippine-produced coconut water into the U.S. market, a boon to coconut farmers in the Philippines.

Jollibee King- Jollibee buys Burger King franchise for 65.5 Million

Philippine fastfood giant Jollibee Foods Corp. buys Burger King franchise after Chowking and Mang Inasal, according to the report from Philippine Daily Inquirer:

Jollibee-Burger

Jollibee has cemented its leading position in the highly competitive quick-service restaurant industry by taking over the Philippine operations of American chain Burger King.
The deal allows JFC to gain a foothold into the premium segment of the hamburger category in the fast-food business as the group was expecting the premium price segment of the market "to grow appreciably in the years ahead as the Filipino consumers' standard of living rises from the growing economy."
In a disclosure to the Philippine Stock Exchange Friday, Jollibee announced that it has signed an agreement acquiring a 54-percent stake in BK Titans Inc., owner of PERF Restaurants that, in turn, is the sole franchisee of the Burger King brand in the Philippines. The deal was priced at 65.5 million pesos (US$1.49 million).
Burger King has 23 restaurants in the country, mostly located in Metro Manila. It generates annual revenues of P800 million and has recently turned profitable despite its much smaller store network compared to Jollibee's.
The American fastfood chain, which is based in Miami, Florida, has similar products to Jollibee such as hamburger, fried chicken and fries in its core menu. However, Burger King's products are priced about 30 percent higher than comparable Jollibee products in the Philippines.
The entry into higher-end fast food products will allow Jollibee to harness the growing mass affluence of Filipino consumers and capture a niche market that is less sensitive to economic cycles. At the same time, its entry is seen allowing Burger King to scale up operations in the country.
With the entry of Jollibee into BK Titans, the fast-food giant will still have as minority partners the groups of businessmen Manuel V. Pangilinan (13 percent) and Alberto Lina (33 per cent).
Founded in 1954, Burger King is the second-biggest fastfood hamburger chain in the world operating more than 12,300 locations and serving 11 million guests daily in 78 countries. Most of its restaurants are owned and operated by independent franchisees. In Asia, the business is managed by Singapore-based BK Asiapac Pte. Ltd.
For its part, Jollibee operates the Philippines' biggest fastfood network with 1,941 stores in the country under the brands Jollibee (733), Chowking (395), Greenwich (209), Caffe Ti Amo (2) and Mang Inasal (393). It has 437 stores overseas under the brands Yonghe King (235), Hong Zhuang Yuan (52), Jollibee (71), Red Ribbon (39) and Chowking (40).
