Idol sa Kusina Recipe- EMBUTIDO GANADO

Here's Idol sa Kusina Recipe for Episode 42- EMBUTIDO GANADO.

Ingredients:

150 g sinsal, leaf lard
1 ½ kilo lean ground pork
2 cans Vienna sausage, chopped
1 pc. Chorizo de bilbao, chopped
1 pc. small carrot, finely chopped
2 pcs. red bell pepper, roasted and chopped
1 cup grated cheddar cheese
4 pcs. onion, chopped
½ cup evaporated milk
½ cup pickle relish
½ cup raisins, chopped
½ head garlic, chopped
4 pcs. egg, beaten
1 tbsp. ground black pepper
2 tbsp. salt

For core filling:
6 pcs. hard-boiled eggs, quartered into wedges
2 cans whole Vienna sausage

For steaming:
2 tbsp. vinegar
1 head garlic, crushed
3-5 pcs. bay leaf

Procedure:

1. Wash and drain sinsal, divide to make seven pieces of embutido and
set aside. Divide also hard-boiled eggs and whole Vienna sausages into seven portions and set aside.
2. Combine all ingredients and
mix until well blended. Divide into seven portions and set aside.
3. Spread out sinsal wrapper on big plate. Spread and flatten one portion of mixture at center of sinsal wrapper. Place one portion of egg
wedges and Vienna sausages at the center of each mixture and hand roll
until mixture covers eggs and sausages.
4. Roll sinsal wrapper into tightly packed log about 2 ½-in. in diameter, and seal both ends. Repeat with rest of mixture.
5. Pour 6 cups of water, vinegar,
garlic and bay leaf in steamer and let boil.
6. Arrange embutido side by side in steamer and steam for 45 minutes to 1 hour. Let cool and slice into rings. Serve with banana ketchup.

Idol sa Kusina Recipe- MAGIC BREADED PORK CHOPS

Here's Idol sa Kusina Recipe for Episode 42- MAGIC BREADED PORK CHOPS.

Ingredients:
½ kg thinly sliced pork loin or pork chops
½ cup oyster sauce
1 8g Maggi Magic Sarap
salt to taste
4 eggs, beaten
Japanese breadcrumbs
cooking oil for deep-frying

For Teriyaki Sauce
Combine –
½ cup oyster sauce
1 tbsp grated ginger
1 cup hot water
1 tsp Maggi Magic Sarap
2 tbsp bron sugar

Procedure:
1. Marinate pork in oyster sauce,
Maggi Magic Sarap and sit for at
least 15 minutes.
2. Dip marinated pork in beaten egg
then dredge with Japanese
breadcrumbs. Repeat procedure
to make sure pork is completely
coated with breadcrumbs.
3. Heat oil. Fry coated pork for at
least 5 minutes on each side or
until golden brown.
4. Transfer on plate lined with
paper towels to drain excess oil.
5. Serve with teriyaki sauce on the
side.

Idol sa Kusina Recipe- TWICE-FRIED CHICKEN

Here's Idol  sa Kusina Recipe for Episode 42- TWICE-FRIED CHICKEN.

Ingredients:

1 cup chicken broth
6 cloves garlic, coarsely chopped
¼ cup Hoisin sauce
2 tbsp. chopped fresh ginger
1 ½ tbsp. soy sauce
1 tbsp. honey
¼ tsp. pepper
Vegetable oil, for frying
500g chicken drumstick
1 tbsp. sesame seeds, toasted

Procedure:

1. Using blender, puree chicken broth, garlic, hoisin sauce, ginger, soy sauce, honey and pepper. Transfer to small saucepan and bring to boil. Lower heat and simmer, stirring occasionally, until thickened. Cover and keep warm over low heat.
2. In large pot, add 2-inch deep oil; heat over medium-high heat. Working in 2 batches, fry wings, turning occasionally, until golden brown. Transfer to paper towel to drain out excess oil.
3. Heat oil again. Working in 2 batches, fry chicken drumstick again until browned. Drain on paper towel.
4. Immediately transfer to large bowl, add half of ginger-garlic sauce and toss. Sprinkle with sesame seeds. Use the remaining sauce for dipping.

Quickfire Recipe- SPICED CHOPSUEY

Here's Quickfire recipe-SPICED CHOPSUEY.

Ingredients:
2 tbsps oil
150g kilo pork liempo, cubed
1/3 cup water
100g shrimp, peeled and deveined
10 pcs quail eggs, boiled and shelled
1/2 carrot, sliced thinly
1 cup oyster mushroom
5 pcs baby corn, sliced diagonally in half
100g snow peas
1/4 head cabbage

Sauce:
1 tsp soy sauce
2 tbsp oyster sauce
1 tsp sesame oil
1 tbsp slurry
1 tsp sugar
1 tsp 5 spice powder

Procedure
1. Pan-fry the pork until it is slightly brown.
2. Add 1/2 cup water, cover and bring to a boil, add shrimp.
3. While waiting for the water to boil, prepare the sauce in a bowl by combining the soy sauce, oyster sauce, sesame oil, slurry, 5 spice powder and sugar. Set aside.
4. When the pork is tender, and the shrimp is cooked, add the cabbage, mushrooms, quail eggs, snow peas, carrot and baby corn.
5. Add the sauce, stirring until it thickens. Then season with AJI GINISA SHRIMP and serve.

Idol sa Kusina Recipe- Seared Tuna Salad with Mango Vinaigrette

Here's Idol sa Kusina Recipe for Episode 41- Seared Tuna Salad with Mango Vinaigrette.

Ingredients:

100 red lolo roso, rinsed
1 head romaine lettuce, rinsed
2 cups baby spinach, rinsed
1 cup cherry tomatoes
2 tbsp oil
300g tuna loin sashimi grade
Salt to taste
Freshly cracked pepper to coat tuna

Mango dressing:

2 pcs mango (reserve few slices for garnish)
1/3 tsp ginger
1/2 lemon, squeezed
1/2 tsp Sesame oil
Splash of Soy sauce
1/2 cup olive oil

Procedure:

1. Place all ingredients in a blender until smooth. Set aside.
2. Season tuna with salt and pepper. Pan sear and set aside before slicing.
3. Assemble lettuce, spinach and sliced tomatoes, plate the tuna and drizzle with mango vinaigrette.

Idol sa Kusina Recipe- Japanese Pasta with Mushrooms and Chicken Soy Sauce and Butter Sauce

Here's Idol sa Kusina Recipe for Episode 41- Japanese Pasta with Mushrooms and Chicken Soy Sauce and Butter Sauce.

Ingredients:


3/4 lb dry spaghetti Al Dente
2 garlic cloves, finely chopped
1/4 lb shiitake mushrooms
2 tbsp Japanese soy sauce
3 tbsp butter
2 tbsp neutral oil
2 shallots, finely chopped
500g Chicken slice
1/2 cup pasta water
fresh ground black pepper
1 pc. Nori
½ cup white wine/vinegar + 1/4 cup sugar (Mirin)
1 tsp. Chicken powder (Hondashi)

Procedure:

1. Fill large pot with salted water and bring to boil. Add spaghetti to pot.
2. In large pan over high heat, add oil, butter and garlic. Cook for 2 mins.
3. Add mushrooms and cook for 3 mins.
4. Add shallots and cook for 2 mins.
5. Add chicken breast slices.
6. While pasta is boiling, reserve about ½ cup of pasta water. Drain pasta and add to pan of cooked mushrooms. Mix well and add soy sauce, sake and mirin. Mix well again, making sure all pasta is coated with ingredients.
7. Add good amount of fresh ground black pepper and a little bit of pasta water to make sauce thicker. Then lastly garnish with onion leeks and julienne nori.
8. Serve with parmesan cheese.

Idol sa Kusina Recipe- CHICKEN YAKITORI

Here's Idol sa Kusina Recipe for Episode 41- CHICKEN YAKITORI.

Ingredients:
60g Deboned Chicken Chunks
2pc/30g Onion Leeks 1inch Long (White Part Only)
1pc Bamboo Skewers Four Inch Long Pinch S
alt & Crusted Peppercorn
1tbsp Yakitori Sauce

Procedure:

1. Thread on bamboo skewers alternate chicken and leeks two pieces
each.
2. Season with salt crusted peppercorn
3. Have ready heated pan broiler (Skillet Steel)
4. Broiled the skewered chicken (Yakitori) for two minutes turn one
side for 2 minutes then brush with yakitori sauce from time to
time until done.

4. Place on plate pour over the top with the remaining yakitori sauce.

TERIYAKI SAUCE for Chicken Yakitori


Ingredients:

2 cups Chicken Stock
1 cup Japanese Soy Sauce
1 1/2 cup white wine/vinegar + 1/2 cup sugar (mirin)
100g Carrots Long Slice (for broiling)
100g White Onion Cut Into 3 Pcs
100g Onion Leeks (Green Part Only) 50g Corn Starch (Dissolved)
150g Sugar 250g Chicken Bones (for broiling)
100g Ginger Slice
1/2 tsp chicken powder (Hondashi)

Procedure:

1. Broil or roast in oven chicken bones, carrots, ginger, white
onion, until dark brown.
2. Have ready oven heated 350°F place the green onion leeks until
became a charcoal color and set aside.
3. Have ready sauce pot, combine the chicken stock, Kikkoman, white
wine/vinegar mixture, sugar, chicken powder, allow to boil, then
add the broiled vegetables and lastly the broiled chicken bones.
4. Reduce the flame and simmer for 30 minutes to 1 hour.
5. Strain into the fine sieve to the sauce pot until boiling then
you may pour dissolved corn starch until light thick and glossy,
season to taste.

Idol sa Kusina Recipe- BEEF TENDERLOIN TIPS IN POTATO BASKET

Here's Idol sa Kusina Recipe for Episode 40- BEEF TENDERLOIN TIPS IN POTATO BASKET.

Ingredients:

1 tablespoon butter
1 cup finely chopped onion
1/8 teaspoon cayenne pepper
Coarse salt
1-1/2 cups chicken broth
1/2 cup heavy cream
1/4 cup finely chopped spring onions
500g beef tenderloin steaks
1-1/2 tablespoons chopped
fresh thyme
1 tablespoon (or more) olive oil
6 pcs. Potato Basket crispy

Procedure:

1. Melt butter in heavy large saucepan over medium heat. Add onion; cover and cook until soft and translucent, stirring occasionally, about 7 minutes.

2. Sprinkle steaks with coarse salt and pepper and cayenne, then chopped thyme. Heat 1 tablespoon olive oil in heavy large skillet over medium-high heat. Add steaks and cook to desired doneness, adding more oil as needed, 3 to 4 minutes per side for medium rare. Then add whipping cream.

3. Divide potato basket then fill with beef tips among plates. Place steaks on plates and serve. Sprinkle with chives.

Idol sa Kusina Recipe- SHRIMP AND VEGETABLES SPRING ROLLS

Here's Idol sa Kusina Recipe for Episode 40- SHRIMP AND VEGETABLES SPRING ROLLS.

Ingredients:

Spring rolls:

• Rice paper wrappers or lumpia wrappers- 8 rounds • Shrimp - 8 pieces • Sesame oil • Carrot (Julienne) - 1 small • Cucumber (julienne) - ½ piece • Celery leaves - 1 pinch • Scallions - 4 pieces • Avocado - 1 • Fresh mint or fresh basil • 1 liter oil for frying

Dipping sauce:
• Soy sauce - 1 cup
• Fresh mint (chopped) - ½ cup
• Chopped garlic - ½ tsp
• Lemon juice - ½
• Sesame oil couple of drops
• Water - ½ cup

Procedure

1. Sauté the shrimp split in half in vegetable oil and sesame oil.
2. Dip the rice wrappers in hot water until soft then place them on a wet rag and arrange on top the julienne of vegetables and the sautéed shrimps.
3. Roll and reserve until service time. Then deep fry until golden brown.
4. Make the dipping sauce by combining all the ingredients together. Let it sit a few minutes before using it for dipping the spring rolls.

Here's Idol sa Kusina Recipe for Episode 40- CLASSIC FISH AND CHIPS.

Ingredients:

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
2 pcs. egg
1 quart vegetable oil for frying
500g pounds fillets Fish

Directions:

1. Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
2. Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
3. Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
4. Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
5. Fry the potatoes again for 1 to 2 minutes for added crispness.

World's Most expensive sushi in Manila, Philippines

According to the report from Reuters, renowned "Karat chef" Angelito Araneta Jr. places African diamonds on top of pearls to re-create his Guiness World Record for most expensive sushi in Manila April 1, 2012. Araneta was recognized by the Guinness Book World of Records in June 2010 as the maker of the World's Most Expensive Sushi, costing 91,800 pesos (US$ 1,978.15) for five pieces.

Idol sa Kusina Recipe- Kasubha Cream Sauce

Here's Idol sa Kusina Recipe for Episode 39- Scallops in Kasubha Cream Sauce.

Ingredients:
½ cup dry white wine
½ cup fish stock
1 pinch kasubha (saffron)
500g shelled scallops, large
1 tsp salt and pepper
3 tablespoons olive oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
125 ml cup heavy cream
1 tbsp lemon juice , squeeze
10g chopped flat leaf parsley (to garnish) crusty bread, to serve

Procedure:

1. Put wine, fish stock and saffron in a pan and bring to a boil. Lower heat, cover and simmer gently for 15 minutes.
2. Season scallops with salt and pepper.
3. Heat olive oil in large heavy bottom skillet. Add onion and garlic and cook for five minutes or until soft. Add scallops and cook gently for five minutes stirring occasionally, or until they turn just opaque. Be careful not to overcook.
4. Using a slotted spoon, remove scallops from skillet and transfer to warmed plate. Add kasubha liquid to skillet, bring to a boil, and boil rapidly until reduced to about half. Lower heat and gradually stir in the cream, just a little at a time. Let simmer gently until sauce thickens. Return scallops to skillet and let simmer for 1-2 minutes just to heat through. Add a squeeze of lemon juice and season to taste with salt and pepper.
5. Serve hot, garnished with parsley, and accompanied by chunks or slices of crusty bread for mopping up the sauce.

Idol sa Kusina Recipe- Hot Chick ala Pobre

Here's Diol sa Kusina Recipe for Episode 39- Hot Chick ala Pobre.

Ingredients:

500 gms chicken fillet (skin on)
1/4 cup soy sauce
2 tbsp Worcestershire sauce
2 tbsp lemon
8 cloves chopped garlic
1/2 tsp oregano (marjoram)
1/2 tsp thyme
1/2 tsp ground pepper
salt to taste
1 tsp paprika
Parsley for garnish

Procedure:

1. In mixing bowl, combine all ingredients together and rub chicken evenly. Marinate for a minimum of 15 minutes.
2. In charcoal grill or oven, grill chicken to desired doneness.
3. Serve in sizzling plate for better and long-lasting heat. Garnish with parsley.

Idol sa Kusina Recipe- CLASSIC CAESAR's SALAD

Here's Idol sa Kusina Recipe for Episode 39- CLASSIC CAESAR's SALAD.

Ingredients:

100g Romaine lettuce
20g Crispy bacon chopped
10g Parmesan cheese
5g Croutons
5g Garlic mashed
½ tspn. mustard
½ cup Olive oil
1pc. Egg yolk
1 tspn. Vinegar or Lemon juice

Procedure:

1. Drain properly the romaine lettuce, and set aside.
2. Mix into bowl egg yolk, mashed peeled garlic, mustard. Pour slowly with olive oil until creamy. Add vinegar, at the last.
3. Tossed lettuce with Caesar’s Salad sauce then place it on salad bowl, over the top with bacon, parmesan cheese, and croutons.
