Idol sa Kusina Recipe- ASIAN CREAMY TUNA SALAD

Here's Idol sa Kusina Recipe for Episode 59- Aug. 26-ASIAN CREAMY TUNA SALAD.

Ingredients:

1.5 kg. tunaloin cut into portion size 150 g. each
1 tbsp. crushed black peppercorn
1 tbsp. salt
1 tbsp. mustard
100 g. spinach (blanched)
¼ cup lemon juice
½ cup Olive oil
500 g. Iceberg lettuce
2 pcs. tomato slice
2 pcs. cucumber slice

Procedure:

1. Season with salt, pepper, and mustard the tunaloin. Pan-sear until done and set aside .

2. Cut the lettuce into chunks, and the spinach too. Place in salad bowl and top with seared tuna. Pour over the top with creamy lemon dressing. Garnish with tomato and cucumber.

How to prepare cream :

1. Combine olive oil, lemon juice, salt, white pepper, mixing well until mixture becomes creamy. And lastly add mayonnaise.

Idol sa Kusina Recipe- LEMON CHICKEN

Here's Idol sa Kusina Recipe for Episode 59- Aug. 26- LEMON CHICKEN.

Ingredients:

1.5 kg. boneless chicken
1 cup cornstarch
2 pcs. beaten eggs
1 cup lemonade
¼ cup calamansi juice
2 tbsp. custard powder
2 pcs. dayap slices for garnish
2 cups cooking oil for deep-fry
1 cup chicken stock
¼ cup sugar
10 g. spring onion

Procedure:

1. Season with salt and pepper. Debone chicken. Dredge into cornstarch, soak into egg, and deep fry until golden brown, and set aside.

2. Sauté garlic and ginger purée. Add chicken stock, lemonade, calamansi juice, slurry custard powder, slurry cornstarch and sugar until mixture thickens .

3. Cut into portion bite size chicken and pour on top with lemon sugar sauce. Sprinkle with spring onion.

Idol sa Kusina Recipe- FIERY CHINESE POPPERS WITH CASHEW NUTS

Here's Idol sa Kusina Recipe for Episode 59- Aug. 26- FIERY CHINESE POPPERS WITH CASHEW NUTS.

Ingredients:

12 pcs. prawns, peeled but leave tail and head
½ cup cashew nuts, roasted
1 cup. catsup
¼ cup hot chili sauce
1 pc. chopped onion
¼ cup chopped garlic
¼ cup cooking oil
2 pcs. green chili, chopped
1 tbsp. salt
10 g. spring onion

Procedure:

1. Sauté garlic, onion and green chili. Add prawns, catsup, hot chili sauce and season with salt and pepper.

2. Place on plate and sprinkle on top with cashew nuts and garnish with spring onion.

Sa Hapag ng Mga Bayani Recipe- Carneng Asada

Carneng Asada is said to be one of the favorite meals of our National Hero, Dr. Jose Rizal according to the book Diosdado Capino. Carneng Asada is beef steak with sauce.

Carneng Asada

Ingredients:
  • Beef
  • Olive oil
  • Lime juice (dayap)
  • Parsley
  • Water
  • Rice flour
  • Salt
  • Potatoes
Procedure: 

  • Lard a thick cut of beef, preferably from the nape.
  • Make a marinade of olive oil seasoned with dayap juice and a sprig of parsley. 
  • Marinate the beef, turning it in the mixture over several hours.
  • Fifty minutes before serving, roast the beef over hot charcoal.
  • Brush the meat with marinade from time to time as it cooks. Let the meat rest before serving.
  • For the sauce or gravy, make extra marinade. Add water and enough rice flour to thicken the marinade.
  • Simmer until sauce is thick.
  • Before serving, sprinkle the meat with a bit of fine salt. Serve on a platter with fried potatoes. Serve sauce on the side.

Max's restaurant invades Asia Pacific

Max's of Manila, popularly known as Max's Restaurant, is a Philippine-based restaurant serving fried chicken and Filipino dishes. According to the report from AKTV,  Max's Restaurant has revived a plan to expand its business in Asia Pacific in a bid to tap the overseas Filipino market.

On the sidelines of the fourth Annual Corporate Treasury and CFO Summit, Rebecca Arago, chief financial officer of the Max's Group of Companies, told reporters that the company considers Australia, Singapore, and Hong Kong as attractive markets for expansion.

Max's open a restaurant each in Dubai and Sharjah on September 2011 - and soon in other Emirates. 

In 1945, after World War II, American troops stationed in Quezon City became friends with Maximo Gimenez, a teacher who had graduated fromStanford University. Some soldiers came to his nearby house for a drink or two, until they insisted that they pay for their drinks.

Gimenez decided to open a café which served chicken, steak, and drinks. He was joined by his wife Mercedes, sister-in-law Felipa Serrano Sanvictores, his niece Ruby who managed the kitchen, and her husband Claro. Ruby's fried chicken proved popular with G.I.s. and locals also began patronising the establishment.

Encouraged by her mother to expand the menu and serve more Filipino food, Ruby set up the Baclaran branch along Roxas Boulevard in Parañaque. They decided to name the restaurant "Max's" after Maximo.[2]

Idol sa Kusina Recipe- GOTONG BAGNET

Here's Idol sa Kusina Recipe for Episode 58- Aug. 19-GOTONG BAGNET.

Ingredients:

1kg. pork belly (pre-boiled and tender)
500 g. ox tripe(pre-boiled and tender)
50 g. ginger purée
50 g. garlic purée
1pc. onion, chopped
1 cup cooking oil for deep-fry
1kg. rice
2liters water
10 g. chopped spring onion
2 g. casubha or saffron
¼ cup crispy fried garlic for garnish
1 tbsp. salt
1 tbsp. white pepper powder
1 tbsp. chicken powder

Procedure:

1. Sauté in deep stock pot with oil, purée garlic, ginger, onion. Add ox tripe, stock or water. Then, boil rice and casubha. Simmer until done. Season with salt, pepper and chicken powder.

2. Deep-fry pork belly until crispy and set aside.

3. Place into bowl the goto on top with Crispy pork belly. Garnish with crispy garlic and spring onion.

Here's Idol sa Kusina Recipe for Episode 58- Aug. 19-BEEF TAPA WITH COFFEE SAUCE OVER RICE.

Ingredients:

1.5 kg.tenderloin beef (flattened)
2 cups black coffee liquid
¼ cup calamansi juice
¼ cup soy sauce
¼ cup corn starch
200 g. onion ( cut into rings)
1 tsp. salt
1 tsp. white pepper powder
¼ cup. cooking oil
10 g. chopped cilantro
White rice good enough for ten servings
1cup chicken stock
1 tbsp. chopped garlic

Procedure:

1. Marinate tenderloin beef, calamansi juice, salt,pepper, soy sauce. Pan-grill until done, and set aside.

2. Sauté in sauce pot with oil, garlic, onion ring until translucent. Add liquid coffee and the remaining marinade liquid. Allow to boil. Thicken with slurry corn starch. Season to taste.

3. Place on plate Bistek Tagalog over the top with sautéed onion rings and the sauce. Garnish with roughly cut cilantro.

Jollibee expand with Taiwan's 12 Sabu

Jollibee Foods Corportation expand businees with joint venture from Taiwan's hot-pot cuisine '12 Sabu'.

Jollibee Foods Corp. on Wednesday beefed up its international business after forming a joint venture with a Taiwanese company for a hot pot food venture, according to AKTV report.

In a disclosure to the Philippine Stock Exchange, the homegrown fast-food giant said its wholly-owned subsidiaries Jollibee Worldwide Pte. Ltd. and Golden Plate Pte. Ltd. have entered into an agreement primarily with Hoppime Ltd., a subsidiary of Wowprime, to establish a company that will own and operate the 12 Sabu brand in China, Hong Kong, and Macau.


The 12 Sabu brand features "low-priced hot-pot dishes served in a clean and bright dining environment. It highlights safe and fresh food which each customer cooks in individual fast-heating stone hot pots."

Here's Idol sa Kusina Recipe for Episode 58- Aug. 19-SIZZLING CHINESE CHICKEN SISIG.

Ingredients:

1.5 kg. deboned chicken (Pre-broiled)
½ cup hoisin sauce
½ cup sesame seeds
½ cup almond flakes, roasted
1 pc. chopped red onion
1 tbsp. chopped garlic
½ cup chopped green chili( siling haba)
¼ cup calamansi juice
30 g. butter
1 tbsp. cooking oil
300 g. chicken liver (pre-broiled) (inihaw na)
1 tsp. salt
1 tsp. crushed black peppercorn
10 g. chopped spring onion

Procedure:

1. Chop the broiled chicken and liver. Marinate with calamansi juice and hoisin in 2minutes.

2. Sauté in sauce pan the oil, garlic, onion, chilli, until slightly brown. Add marinated chicken and liver. Season with salt, pepper and add butter.

3. Have ready sizzling plate. Place the sisig and serve immediately while hot. Garnish with spring onion.

Idol sa Kusina Recipe- OPEN-FACE OMELET WITH ASPARAGUS AND BACON

Here's Idol sa Kusina Recipe for Episode 57-Aug. 12- OPEN-FACE OMELET WITH ASPARAGUS AND BACON.

Ingredients:

500 g. green asparagus spears
6 pcs. eggs
Salt
1 tsp. crushed black pepper corn
2 tbsp. vegetable oil
1 cup bacon
1 cup Mozzarella cheese shredded
20 g. fresh basil

Procedure:

1. Preheat oven.
2. Snap off and discard tough ends of asparagus. Cut asparagus diagonally into ¼ inch pieces. Whisk together eggs, salt, and pepper in a bowl.
3. Heat oil in a 20-inch non-stick oven-proof pan over medium heat. Add bacon, and asparagus, and cook, stirring occasionally, for 2to 4 minutes or until bacon is thoroughly heated and asparagus is crisp tender.
4. Reduce heat to low and add egg mixture. As egg mixture starts to cook, gently lift edge of omelet with spatula, and tilt pan so uncooked portion flows underneath. Cook 2 minutes or until almost set.
5. Sprinkle oven with cheese. Wait for 1 minute or until cheese melts. Remove from oven, and carefully slide omelet onto a plate. Garnish with fresh basil.

Here's Idol sa Kusina Recipe for Episode 57-Aug. 12- ARROZ CHICKEN ALA CUBANA IN ESPESYAL.

Ingredients:

1 kg. minced chicken meat
1 pc. chopped onion
3 cloves chopped garlic
1 tbsp. sugar
1/2cup. raisins
¼ cup tomato paste
½ cup chicken stock
1 tsp. seasoning powder
2 tbsp. cooking oil
10 pcs. Pita bread
5 pcs. ripe banana (saging Saba)
1 tsp. salt
1 tsp. white pepper powder
10 g. chopped spring onion

Procedure:
1. Sauté in sauce pan oil, garlic, onion, tomato sauce, chicken stock, minced chicken until done. Add raisins, sugar, salt, pepper. Simmer for 2 minutes and set aside.
2. Deep-fry banana until golden brown and set aside.
3. Open each piece of Pita bread and fill it up with Arroz chicken a la cubana and fried banana.
4. Roll and place on plate. Garnish with chopped spring onion.

Idol sa Kusina Recipe- TANIGUE STEAK

Here's Idol sa Kusina Recipe for Episode 57- Aug. 12 CHEF BOY's TANIGUE STEAK.

Ingredients:

1kg. tanguigue steak 150 g. each cut per portion
30g. black olives cut into slices
20g. red bell pepper (small dice cut)
20g. green bell pepper(small dice cut)
¼ cup calamansi juice
10g. capers chopped
20g finely chopped white onion
½ jigger brandy
½ jigger white wine
50 g. butter
1 tsp.salt
1 tsp. white pepper powder
1 pc. dayap or US lemon cut into wedges
1 pc. small tomato, dice cut
1 tbsp. mustard

Procedure:

1. Season with salt, pepper. Brush the tanguigue steak with mustard. ,Pan grill into frying pan,Flambé with brandy, white wine, until done, and set aside.
2. Sauté in sauce pot with olive oil, onion, bell pepper, tomato. Season with salt, pepper. Add butter, calamansi juice, black olives.
3. Place tanguigue steak on plate then pour on top with Mediterranean sauce. Garnish with lemon wedges.

Foodies paid tribute Wednesday to celebrity chef Julia Child, marking the 100th anniversary of the birth of the woman who introduced Americans to exotic French delicacies like boeuf bourguignon.

Across the United States, 100 restaurants celebrated with Child-inspired menus during the Julia Child Restaurant Week, which runs August 7-15.

Happy 100th birthday to one (of) my idols, the one and only #JuliaChild!" cooking show host Paula Deen tweeted.

The Return of McDonald's Curly Fries

Hurry for The Return of McDonald's Curly Fries only for a limited time!

McDonald’s Philippines has announced the return of its famous spiced and deep-fried twister fries or potato curls but only for three weeks.

“Hi guys, yes, it’s back! Get ‘em in the nearest McDonald’s store for only P60 a la carte,” McDonald’s Philippines said on Facebook.

McDonald’s Philippines only sells twister fries for a limited run each year, increasing the product’s value.

Idol sa Kusina Recipe- PINOY FISH AND CHIPS WITH TUBA VINAIGRETTE DRESSING


Here's Idol sa Kusina Recipe for Episode 56 / Aug. 5 - PINOY FISH AND CHIPS WITH TUBA VINAIGRETTE DRESSING.

Ingredients:

1 kg. tawilis
1 cup all-purpose flour
1 cup cornstarch
2 pcs beaten egg
1 cup water
1 tbsp baking powder
oil for deep frying

½ cup tuba
1 tsp fish sauce
1/3 cup olive oil
¼ cup cilantro, chopped
¼ cup red onion, finely chopped
1 tbsp garlic, chopped
salt and pepper

Procedure:

1. Combine beaten egg, water, flour, baking powder and cornstarch. Mix well until fluffy. Set aside.
2. Season tawilis with salt and pepper, dredge into flour, deep into mixture of batter dough.
3. Deep fry until crispy. Place on platter and serve on the side with vinaigrette dressing.
4. For vinaigrette dressing, combine all ingredients in bowl, then lastly whisk in the oil slowly to emulsify the dressing.

Idol sa Kusina Recipe-CELERY PASTA SOUP

Here's Idol sa Kusina Recipe for Episode 56 / Aug. 5 - CELERY PASTA SOUP.

Ingredients:

1 white onion, diced
1 large potato, diced
1 carrot, diced
3 stalks celery, chopped
1 cup garbansos
2 tbsp oil
2-3 pcs cloves garlic, chopped
salt and pepper to taste
5 cups stock
2 cups cooked wheat pasta noodle (macaroni or any small pasta)
parmesan cheese to top

Procedure:

1. In pot, saute onion, potato, carrots and celery and season with salt and pepper.
2. Saute until celery and potatoes are a little soft. Then add in garlic, garbansos and stock.
3. Bring to a simmer until vegetables are cooked. Add in cooked pasta and stir for a minute.
4. Transfer into bowls and top with parmesan cheese.

Idol sa Kusina Recipe- POACHED PRIME RIBS AND HERBED MASHED SWEET CAMOTE

Here's Idol sa Kusina Recipe for Episode 56 / Aug. 5- POACHED PRIME RIBS AND HERBED MASHED SWEET CAMOTE.

Ingredients:

1.5-2 k prime rib
1/3 cup yellow mustard
salt and pepper to taste
1 pc white onion
1 pc carrot
1 pc celery

Procedure:

1. Tie with butcher's string then season with salt and pepper, and rub with mustard.
2. Have ready roasting pan with mirepoix then place prime rib; and roast until done or around 1½ hours.

For Herbed Mashed Camote:

Ingredients:

1kg sweet potato par-boiled and mashed already
¼ cup butter
1 cup fresh milk
1 tbsp chopped basil
1 tsp salt
1 tsp white pepper

Procedure:

1. Melt buter, add mashed sweet
potato, milk, salt pepper, mixing well and lastly chopped fresh basil. Scoop into the platter, arrange slices of roast beef.
2. Serve on the side with au-jus (gravy sauce)
