Kusina Master Recipe- Thai Fried Prawns with Garlic

Kusina Master Recipe- Thai Fried Prawns with Garlic.

Procedure:
1. With each prawn trim off feelers and legs, then devein by making a slit from head to tail. Rinse clean and set aside until neede.
2. Prepare marinade. Pound garlic, coriander roots and peppercorns together using a mortar and pestle until well-blended. Transfer mixture to a mixing bowl and add soy and fish sauces and sugar, if using. Mix prawns and leave to marinate for 3 minutes.
3. Heat oil in wok over medium-high heat. Stir fry prawns briskly until they turn red, then dish out. Garnish as desired with crisp-fried garlic and coriander leaves. Serve immediately.

Here's Kusina Master Recipe- Thick Spicy Beef Stew.

Procedure:
1. Combine all spice paste ingredients in a blender (processor) until smooth.
2. Heat oil in a wok or a large pan. Fry onions and spice paste over low heat for about 10 minutes, stirring constantly.
3. Add Beef, Tamarind Juice, sugar and salt to taste, then add turmeric leaves. Continue to stir constantly until is cooked and gravy is thickened.
4. Remove from heat, dish out and serve with rice.

Sars-like Coronavirus- Pinoy Abroad Alert

Two victim of Sars-like Coronavirus has been reported in Saudi Arabia and in Qatar. Philippine Authorities have then issued an advisory to Overseas Filipino Workers (OFWs) in Saudi Arabia and Qatar to be alerted against a SARS-like Coronavirus. Coronaviruses typically spread like other flu viruses. They are likely to be passed from person to person when an infected person coughs or sneezes.

Doctors at the Ninoy Aquino International Airport (NAIA) quarantine section encouraged OFWs to observe proper personal hygiene to avoid getting the virus which is fatal if symptoms are not immediately treated.


What are coronaviruses?

They were first identified in the 1960s, and were named after the crown-like projections on the surface of the virus. Coronaviruses cause respiratory infections in both humans and animals.

What type is this, and what are the main symptoms?

The new strain has been confirmed so far in only two cases so there is very limited information on its impact, transmission and severity at this point in time. In the reported cases, patients had fever, cough, and difficulty in breathing.

What is the treatment?


The Health Protection Agency says experts do not have enough information on the virus to make specific recommendations for treatment. They can only provide acute respiratory support for those with severe symptoms, and advise for those in hospital.

Peanut butter recall for Salmonella contamination issue

The US Food and Drugs Administration said the Creamy Salted Valencia Peanut Butter (sku 97111) was recalled by Trader Joe’s “because of potential contamination with Salmonella.”, as warrned by FDA.


The recalled Creamy Salted Valencia Peanut Butter comes in a 16 ounce, plastic jar with an expiration date stamped below the lid, the FDA further said, adding that all code dates up to and including July 26, 2013 are included in the recall.

“Production and distribution of the item has been suspended while the FDA and the Valencia Peanut Butter supplier continue their investigations,” the notice said.



Meanwhile, Mexico-based company Sunland Inc., which reportedly manufactures and packages the Trader Joe’s product, likewise recalled 76 types of peanut butter and almond butter.

A Sunland spokeswoman explained they’re doing the recall as the peanut and almond butters were manufactured with the same equipment as the Trader Joe’s product.

DECLARING THE FOURTH MONDAY OF SEPTEMBER OF EVERY YEAR AS “KAINANG PAMILYA MAHALAGA” DAY AND AMENDING PROCLAMATION NO. 1895 (S. 2009)
WHEREAS, Section 12, Article 2 of the 1987 Constitution declares that the State shall recognize the sanctity of family life and shall protect and strengthen the family as the basic social unit;
WHEREAS, Proclamation No. 60 (s. 1992) declared the fourth (4th) week of September as “Family Week” to focus on the importance of strengthening and promoting unity, solidarity and stability of the Filipino Family as the basic unit of Filipino society and for whose well-being all national development efforts are directed;
WHEREAS, Proclamation No. 847 (s. 1996) declared the 4th Sunday of September as Family Thanksgiving Day;
WHEREAS, Proclamation No. 1895 (s. 2009) declared the 4th Monday of September of 2009 as the “Salu-Salo ng Pamilya Mahalaga” day;
WHEREAS, Executive Order (EO) No. 238 (s. 2003), amending EO No. 241 (s. 1995), expanded the powers, functions and membership of the National Steering Committee of the Family Week, and further renamed it as the National Committee on the Filipino Family (NCFF), mandated to promote the family as the foundation of the nation and to provide opportunities for partnership with the private sector, particularly civic, religious, educational institutions and media groups;
WHEREAS, one of the meaningful traditions of Filipinos is the common family meal where all members of the family are present to signify their unity and thanksgiving for God’s abundant blessings;
WHEREAS, having a common family meal encourages parents to stay connected with their children and understand the challenges they face;
WHEREAS, there is a need to highlight and celebrate the value of families sharing meals together as a national tradition that should be observed annually and sustained by all Filipino families; and
WHEREAS, there is a need to amend Proclamation No. 1895 and rename “Salu-Salo ng Pamilya Mahalaga” day as “Kainang Pamilya Mahalaga” day to distinguish the latter as a regular annual event.
NOW, THEREFORE, I, BENIGNO S. AQUINO III, President of the Philippines, by virtue of the powers vested in me by law, do hereby declare:
SECTION 1. “Kainang Pamilya Mahalaga” day. The “Salu-Salo ng Pamilya Mahalaga” day is now renamed as “Kainang Pamilya Mahalaga” day. It will be held every 4th Monday of September of every year, in conjunction with the annual celebration of the Family Week.
SECTION 2. Role of the NCFF and concerned agencies. The NCFF shall lead the national observance of “Kainang Pamilya Mahalaga” day. The heads of all Departments, agencies, Government-Owned and Controlled Corporations (GOCCs), Local Government Units (LGUs), and other government instrumentalities shall support NCFF in its activities related to the event.
All national and local publications, television and radio stations are encouraged to help generate awareness and public support for activities in promoting the observance of “Kainang Pamilya Mahalaga” day.
SECTION 3. Repealing Clause. Proclamation No 1895 (s. 2009), all other orders, rules, regulations, and issuances, or parts thereof, which are inconsistent with the provisions of this Proclamation are hereby repealed or modified accordingly.
IN WITNESS WHEREOF, I have hereunto set my hand and caused the seal of the Republic of the Philippines to be affixed.

On September 26, Jessica will join the illustrious roster of endorsers of Jollibee, the country’s biggest fast food chain. Prior to this on September 25, Tuesday, Bench will officially launch her as its newest international endorser. The deal was announced as early as July by the popular fashion retail brand on its Facebook and Twitter accounts.

From September 27 to 30, Purple Yam will open its kitchen in Brooklyn’s Ditmas Park for “Culinary Dreams: Filipino-American Chefs Forum and Dinner Party,” a hybrid event where open dialogue and scrumptious dinner will have an experimental performance.

The public forum-cum-dinner party from 7 p.m. to 9 p.m. will feature a bicoastal cast of seven chefs – three from the Bay Area and four from New York.

Three of the Bay Area’s most successful chefs —Dominic Ainza of Mercury Restaurant & Lounge in San Francisco; Tim Luym of Attic Restaurant in San Mateo, Calif.; and Cocoy Ventura of Cocoy Ventura Culinary Services in San Francisco — will join Purple Yam owners Romy Dorotan and Amy Besa, Perry Mamaril and King Phojanakong of Umi Nom in Brooklyn and Kuma Inn in Manhattan.

Idol sa Kusina Recipe- GRILLED AND FRIED CHICKEN TERIYAKI

Here's Idol sa Kusina Recipe for Episode 62- Sept. 16- GRILLED AND FRIED CHICKEN TERIYAKI.

Ingredients:

1kg. chicken breasts (cut into chunks)
salt and pepper to taste
½ cup cornstarch
500 g. onion leeks, white part only (cut into 1 inch long)
½ cup teriyaki sauce
Oil for deep frying

1kg. chicken thigh, deboned
salt and pepper to taste
¼ cup sesame seeds
½ cup teriyaki sauce
2 tbsp. spring onions for garnish

Procedure:

1. Season the chicken breasts with salt and pepper and dredge in cornstarch. Thread on bamboo skewers alternating chicken breasts and leeks, 3 pieces each stick, and set aside.
2. Season chicken thigh with salt and pepper, and set aside
3. Deep fry chicken skewers until cooked. Drizzle or brush with teriyaki sauce.
4. Pan grill chicken thigh until done; brush with teriyaki sauce while grilling.
5. Place on plate the fried and grilled chicken and garnish with sesame seeds and spring onions.

For Teriyaki Sauce:

1 cup. Japanese soy sauce
1 cup mirin
1 cup sake
30 g. slurry corn starch
50 g. sugar
1 tbsp. hondashi (dashi bonito)
1 cup chicken stock

Procedure:

1. Combine into sauce pot all ingredients except slurry cornstarch. allow to boil then add slurry corn starch to thicken.

Chef Sau Del Rosario speaks at Learniversity

Chef Sau Del Rosario speaks at Learniversity being held at the Polytechnic University of the Philippines. Sau del Rosario is one of the country's most well-loved chefs. French-trained Sau del Rosario was born and raised in the center of Philippine gastronomy, Pampanga. He studied in UP Diliman with a degree in Hotel Management. Sau took his professional training in Nice, South of France under the guidance of Michelin Chef Christian Plumail of Restaurant L'univers.

Here's Idol sa Kusina Recipe for Episode 62- Sept. 16- LYCHEE DRINK.

Ingredients:

150 ml. syrup from the canned lychee
50 ml. ice cold water
1 Lime juice
6 lychees
mint leaves for garnish
Lemongrass as toothpick for lychees

Procedure:

1. Combine all ingredients and mix.
2. Skewer lychee with lemongrass and serve

Idol sa Kusina Recipe- TEMPURA WITH SESAME SOBA NOODLE.

Here's Idol sa Kusina Recipe for Episode 62- Sept. 16- TEMPURA WITH SESAME SOBA NOODLE.

Ingredients:

For Tempura:
1 kg. squid with ink cut into crisscut cuts

For Tempura Batter:

700 g Showa flour
5 pcs. egg yolk
1 ½ cups ice cold water
250 g cube ice
¼ -1/3 cup squid ink

Procedure:
1. Have ready mixing bowl. Combine all ingredients, showa, egg yolk, squid ink, water and mix well. Then add the ice cube.
2. Dredge squid into corn starch, then dip into tempura batter.
3. Have ready heated oil, deep-fry the squid until crispy, and set aside.
4. Place on the bowl sesame soba noodles. Top with squid tempura.
To Prepare Sesame Soba Noodles:
Ingredients:
1kg. dried soba (buckwheat) noodles - cooked
1½-inch.ginger, thin match sticks and blanched
1 medium carrot, thin match sticks and blanched
4 spring onions, chopped

For Sauce:
1½ cups instant dashi stock
½ cup Japanese soy sauce
1/3 cup mirin
good pinch each salt and pepper

For Garnish:
Pickled ginger
thinly sliced pickled daikon
1 sheet toasted nori

Procedure:
1. To make Sauce: Combine the dashi, soy sauce, mirin, salt and pepper in a small pan. Bring to a boil then cool completely. When ready to serve, pour into four small, wide dipping bowls.
2. Gently toss the cooled noodles and vegetables to combine. Arrange in individual serving bowls.3. Garnish noodles with nori strips. Place a little pickled ginger and shredded daikon on the side of each plate. Serve with squid ink tempura.

Idol sa Kusina Recipe- SPICED CHORIZO AND CRAB WITH DINNER ROLL

Here's Idol sa Kusina Recipe for Episode 62- Sept. 16-  SPICED CHORIZO AND CRAB WITH DINNER ROLL.

Ingredients:

4 pcs. fresh crab
2 tbsp. cooking oil
6 small shallots, diced
6-8 cloves garlic, minced
3 tbsp. minced ginger
1 red finger length chili, deseeded and sliced
3 cups chicken stock
4 tbsp. black bean paste
4 tbsp. bottled sweet chili sauce
½ cup bottled sweet tomato ketchup
1 tbsp. sugar
2 tbsp. rice wine
2 tbsp. salt
1 tsp. pepper
2 tbsp. corn starch mixed with 3 tbsp. water
2 eggs lightly beaten
2 sprigs coriander leaves (cilantro), to garnish
2 springs onion, to garnish
12 pcs. soft dinner roll
2 pcs. Lucban chorizo
2 pcs. Vigan chorizo
2 pcs. adobo chorizo
2 pcs. spicy longganisa

For Chili Ginger Sauce:

5-6 red finger length chilies, deseeded
6 cloves garlic, peeled chopped
4 slices fresh ginger chopped
2 tsp. sugar
½ tsp. salt
1 tsp. rice vinegar
1tbsp. water

Procedure:
1. If the crabs are still alive, put them in the freezer for 15- 20 minutes to immobilize them. Cut crabs into half lengthwise with a heavy cleaver. Remove the back and spongy gray part. Separate claws and smash them with a mallet, keeping the legs attached.

2. To make the Chilli Ginger Sauce, blend all the ingredients in a mortar or blender. Set aside.

3. Heat the oil in a work over medium heat and stir-fry the shallots, garlic, ginger, and chili until fragrant, about 3 minutes. Add the Chilli Ginger Sauce, chicken stock, black bean paste, chili sauce, tomato sauce, sugar, rice wine, salt and pepper, and bring to boil. Then reduce the heat and simmer, for 2 minutes. Add the crabs and five kinds of chorizo, simmer uncovered, tossing several times until cooked, about 10 minutes.

4. Add corn starch mixture and stir the sauce until it thickens. Add the eggs and stir gently until they set, then transfer everything to a large serving dishes. Garnish with fresh coriander leaves and spring onions, and serve with soft dinner roll on the side.

McDonalds and Seven Eleven “I am for Peace” Campaign Business Partners

McDonalds and Seven Eleven named Business Partners for Peace for Office of the Presidential Adviser on the Peace Process.
 
Under the “Business Partners for Peace” program, OPAPP will tie up with several companies such as McDonald’s and 7-11 that will carry peace as their advocacy.

Meanwhile, Black Eyed Peas singer apl.de.ap, top endorser Anne Curtis, and Gerald Anderson are among today’s celebrities who will be named National Peace Ambassadors during the launch of the “I am for Peace” campaign in Malacañan Palace this Friday, September 14, Presidential Adviser on the Peace Process Teresita Quintos Deles announced.

“Coming from diverse industries and backgrounds, the Peace Ambassadors will unite for one meaningful cause: peace,” Deles added.

Joining them in saying “I am for Peace” will be no less than President Benigno S. Aquino III who will lead the campaign launch,” Deles said.


More Filipinos are pledging their support for peace as the agreement between the government and the Moro Islamic Liberation Front nears its signing, according to Deles.

“The government has been working hard; but peace building is not the work of government alone. We need more stakeholders who believe in the peace process. For a peace agreement to be truly successful, we’ll need the participation of the entire nation,” Deles said.

The “I am for Peace” campaign seeks to engage all sectors of society in sustaining support for the country’s peace process. It will also mobilize social engagements and information dissemination especially on the significant developments and milestones of the on-going Mindanao peace talks.

“The campaign encourages different sectors to contribute in achieving just and lasting peace in the country,” Deles said. “It will also launch the ‘I Choose: Peace’ youth football program and the ‘Business Partners for Peace’ promoting peace advocacy for companies.”

Ingredients:

½ cup brewed coffee
3 tbsp sugar
½ cup milk
2 cups ice
Caramel syrup (in squeeze bottle)
Whipped cream to top

Procedure:

1. Brew coffee beans using BIASLETTI COFFEEMAKER. Let cool
2. Blend coffee, caramel, ice, milk and sugar in a blender.
3. Top with whipped cream and drizzle with caramel syrup.

Tuding's Original Porkchop from Binan, Laguna

Have you tried Tuding's Original Porkchop from Binan, Laguna? Well' according to Ms. Kris Aquino's tweet  she "Super Like " it very much. A pork chop is a cut of pork (a meat chop) cut perpendicularly to the spine of the pig and usually containing a rib or part of a vertebra, served as an individual portion.

Pork chops are suitable for roasting, grilling, or frying, but there are also recipes of stuffed pork chops. They can be used boneless or bone-in. There is a belief that bone-in chops taste better because bones make the meat juicier by retaining the moisture inside. Pork chops are usually cut between 1/2 inch and 2 inches thick.

Idol sa Kusina Recipe- PORK ADOBO BURGERS WITH KESONG PUTI

Here's Idol sa Kusina Recipe for Episode 61 / Sept. 9- PORK ADOBO BURGERS WITH KESONG PUTI.

Ingredients:

700g. lean meat ground pork
300g. pork ground fat
¼ cup soy sauce
¼ cup crispy fried chopped garlic
½ cup. all-purpose flour
1 tbsp. chicken powder
¼ cup chopped onion
¼ cup vinegar
2 pcs.beaten egg
100g. kesong puti cubes
2tbsp. cooking oil
10g. chopped parsley
6 burger buns, toasted or grilled
2 pc salad tomato, sliced
1/2 head romaine lettuce
skewers for securing the burger

PROCEDURE:

1. Combine all ingredients except kesong puti and cooking oil. Form into round burger, and set aside.

2. Have ready heated burger pan. With oil pan grill the burger until done.

3. Place grilled burger onto the bun then top with lettuce, tomato slices and kesong puti. Garnish with chopped parsley. Skewer to secure the burger.

Ingredients:

700 g. lean ground beef
300g regular ground beef
1 cup. Shaoxing Chinese wine
½ cup soy sauce
1 tsp. dark mushroom soy sauce
1 tbsp. sugar
1 tbsp chopped garlic
1 pc. chopped onion
2 cups. chicken stock
1 tsp. salt
1tsp. chicken stock
½ cup. corn starch
300g. mapo tofu, cut into cubes
1pc. green bell pepper
1pc. red bell pepper

Procedure:

1. Sauté garlic, onion, ground beef. Flambé with Shaoxing, add chicken stock, soy sauce, dark mushroom soy sauce, sugar, salt, pepper. Simmer until cooked.

2. Add slurry corn starch to thicken. Lastly add tofu. Place on plate and garnish with red and green bell pepper.

Here's Idol sa Kusina Recipe for Episode 61 / Sept. 9- LECHON MANOK WITH CURRY SAUCE.

Ingredients:

2 kg. (2pcs.) whole chicken
½ cup. lemon grass, chopped
15 g. fresh coriander leaves
2 pcs. fresh tomato
20 g. ginger
20 g. peeled garlic
2pcs. green chilli finger
2 cups. coconut milk
1 tsp. cardamom powder
1 tsp. coriander seeds powder
1pc. red onion
1tsp. turmeric powder
1tsp. salt
1tsp. white pepper
¼ cup cooking oil
Serve with rice

Procedure:

1. Combine all ingredients, except chicken, into the blender until pureed. And set aside.

2. Season with salt and pepper, and marinate whole chicken in 1 cup liquid puree.

3. Have ready heated oven and roast chicken until done. Remove chicken from roasting pan, add the remaining liquid curry puree. Simmer until thick to make the curry sauce.

4. Cut lechon manok into portion size and pour the curry sauce on top. Serve with white rice.

Here's Idol sa Kusina Recipe for Episode 60 / Sept. 2 CLAM AND MUSSEL SOUP WITH BREAD STICKS.

Ingredients:

1 kg. jumbo clams
1 kg. Australian mussel half shell (big size)
2 tbsp. cooking oil
2 tbsp. finely chopped fresh root ginger
1 tbsp. finely chopped garlic
1 tbsp. finely chopped spring onion
2 tbsp. shaoxing rice wine
8 cups. water
12 pcs. bread sticks
1 tsp. salt
1 tsp. white pepper

PROCEDURE:

1. Start by washing clam and, mussel thoroughly, then soak them in clean water until it is time to drain them and toss them in the wok.

2. In a preheated wok, heat oil and stir-fry root ginger, garlic and onion until fragrant.

3. Over high heat, add clams, mussel, and Shaoxing and stir-fry for 2 minutes to mix everything together.

4. Cover and cook for about 3 minutes. Add salt. White pepper, and garnish with spring onion.

Here's Idol sa Kusina Recipe for Episode 60 / Sept. 2 BAKED POTATO AND SALMON AU-GRATIN.

Ingredients:
1 kg. peeled round slices potato (pre-boiled)
1 kg. aalmon fillet 100g. per piece
1 tbsp. mustard
1 tsp. salt
1 tsp. white pepper
50 g. all-purpose flour
2 cups fresh cream
2 cups white sauce (béchamel sauce)
50 g. butter
2 tbsp. cooking oil
100 g. mozzarella cheese
30 g. parmesan cheese
¼ cup white wine
1 cup fresh milk
1 tbsp. chicken powder
10 g. chopped parsley

Procedure:

1. Season salmon with salt and pepper. Brush with mustard. Dredge into flour. Pan grill until half done. Flambé with white wine. Set aside.
2. Have ready microwave safe ceramic dish and brush surface with melted butter, then bed with potato on top with half-done salmon and set aside.
3. Boil milk, add white sauce, all-purpose cream, chicken powder, and then pour over into salmon, grated mozzarella cheese. Cover with cling wrap.
4. Place into G.E. MICROWAVE OVEN for 5 mins. then sprinkle on top with parmesan cheese and chopped parsley.

Here's Idol sa Kusina Recipe for Episode 60 / Sept. 2 MUSTARD CREAM GRILLED CHICKEN PASTA.

Ingredients:

10 pcs. chicken breasts, deboned
2 tbsp. yellow mustard
½ cup all-purpose cream
1 cup béchamel sauce
½ cup chicken stock
1 tbsp yellow mustard
500g. al-dente pasta (pre-cooked) fettuccini
1 tsp.salt
1 tsp.white pepper
1 tbsp. white wine
30 g. butter
2 tbsp. cooking oil
¼ cup parmesan cheese
10 g. chopped fresh basil

Procedure:

1. Flatten chicken breasts, season with salt and pepper, and brush with mustard.

2. Pan grill flattened chicken in little oil, then de-glaze with white wine, turn once, until done. And set aside.

3. Melt butter in pan, add al-dente pasta and season with salt, pepper and set side.

4. Combine béchamel white sauce, mustard, all-purpose cream and chicken stock into sauce pot until creamy.

5. Place pasta on a plate, and top with GRILLED CHICKEN SLICES and pour mustard cream sauce.

6. Sprinkle with chopped fresh basil and parmesan cheese.
