Idol sa Kusina Recipe- MAGIC GINATAANG TILAPIA

Here's Idol sa Kusina Recipe for Episode 67- Oct. 28- MAGIC GINATAANG TILAPIA.

Ingredients:

3 medium whole tilapia, scaled and scored
2 8g sachets MAGGI MAGIC SARAP
1½ cups chopped onions
1½ cups chopped tomatoes
1 cup coconut milk

Procedure:

1. Pat-dry tilapia then rub with MAGGI MAGIC SARAP. Arrange in a pot.
2. Combine onions and tomatoes in a small bowl. Spread evenly on top of each tilapia. 
3. Pour coconut milk on top of tilapia and wrap each in wilted banana leaves. 
4. Cover pot and steam for 10 minutes or until done.

Idol sa Kusina Recipe- GRILLED LIYEMPO NI CHEF BOY

Here's Idol sa Kusina Recipe for Episode 67 / Oct. 28- GRILLED LIYEMPO NI CHEF BOY.

Ingredients:

1 k pork liyempo
 cup soy sauce
2 tbsp. vegetable oil
¼ cup brown sugar
¼ cup calamansi juice
¼ tsp/ chicken powder
Salt and pepper to taste

Procedure:

1. Wash liyempo. Drain in a strainer.
2. Marinate liyempo with the mixture of soy sauce, vegetable oil, brown sugar, calamansi juice and little salt and pepper.
3. Sprinkle and rub chicken powder.
4. Grill in charcoal for 10 to 15 minutes on side.
5. Brush with remaining marinade mixture.

Sarap Diva Recipe- SPECIALTY: MEAL IN ONE

SPECIALTY: MEAL IN ONE by Ronnie Henares.

Ingredients and things needed:

1. Oven
2. Strainer
3. Baking tray- Pyrex
4. Cheese grater
5. Containers, mixing forks and spoons, serving plates, utensils, knife, chopping board
6. Spaghetti noodles
7. 1 can Carne Norte
8. 1 can of Mushroom Soup
9. 1 can of Cream of Corn
10. I clove of garlic
11. Olive oil
12. Water
13. Tomato
14. 1 small onion
15. Butter
16. French bread
17. Mozzarella cheese or grated mozarella
18. Salt – iodized and rock salt

Procedure:
1. In a deep pan with butter, cook the spaghetti until al dente.
2. Put a little salt to taste.
3. Strain the noodles to remove the water.
4. Once water is drained, set aside noodles and put it in a baking tray (has to be Pyrex).
5. In another pan, heat oil.
6. Smash the clove of garlic and throw it into the pan to get the flavor. Remove the garlic if it turns brown.
7. Sautee carne norte with tomato and onion.
8. Make sure that the spaghetti is laid flat on the pyrex. Put cooked carne norte on top of the noodles then spread the cream of mushroom on top of it (straight from the can). Then spread cream of corn on top of it (straight from the can).
9. Put grated mozzarella on top to enhance flavour.
10. Put it into the oven and let it cook for 10 minutes.
11. Take it out of the oven when bubbles appear.
12. Put on a serving plate and garnish it with French bread.

Ground Beef Mixture Ingredients:

1 Kg Ground Beef
1 Pc Onion
4 Cloves Garlic
1 Pc Red Bell Pepper
1 Pc Green Bell Pepper
1 1/2 Cup Beef Stock
1 Tbsp Olive Oil
2 Tbsp Soy Sauce
Salt
Pepper

Mashed Potato Ingredients:

6 Pcs Potatoes (Boiled & Peeled)
1 Cup Fresh Milk
1/2 Tsp Nutmeg
Salt
Pepper

Ground Beef Mixture Procedure:

- Saute onion and garlic with olive oil until caramelized.
- Add in bell peppers and continue to saute for 3 minutes then add in ground beef. Continue to cook for 5 mins.
- Add in soy Sauce and beef stock then simmer for 5 mins. Season with salt and pepper.
-Place on a oven proof dish then top mashed potato and bake for 20-30 minutes.

Mashed Potato Mixture Procedure:

- Mash potato with fresh milk
- Season with nutmeg, salt and pepper.

Santa Claus no more smoking

Christmas is just around the corner and Santa Claus is no more smoking!

“The stump of a pipe he held tight in his teeth/and the smoke it encircled his head like a wreath” used to be verses in “A Visit from St. Nicholas,” a poem from 1823.

Now, Canadian author Pamela McColl has decided to delete those lines in a new version of the poem to portray a smokeless Santa.


According to the New York Post, McColl spent $200,000 for printing 55,500 copies of her book in English, Spanish and French.

She also hired an illustrator “to redraw Santa without his pipe and halo of tobacco haze,” reports The Post.

Idol sa Kusina Recipe- EMBUTIDO ESPESYAL

Here's Idol sa Kusina Recipe for Episode 66 / Oct. 21-EMBUTIDO ESPESYAL.

Ingredients:

½ kl ground pork
1/3 cup pickle relish
6 slices ham, finely chopped
¼ cup raisins
3 eggs
½ cup grated cheese
2 tbsp. chopped green bell pepper
¼ cup finely chopped carrots 
Salt and pepper to taste

Procedure: 

1. In bowl, combine all ingredients and mix until well blended. Divide mixture into 2 and wrap in aluminum foil or plastic. 
2. Roll tightly and seal the ends.
3. Place in a steamer and cook until done.
4. Put inside NEW GE GEO NO-FROST refrigerator to cool; then slice.

Idol sa Kusina Recipe- ASIMAGICAL SINAMPALUKANG ADOBO

Here's Idol sa Kusina Recipe for Episode 66 / Oct. 21-ASIMAGICAL SINAMPALUKANG ADOBO.

Ingredients:

10 cups water
½ cup sliced onions
One fourth cup sliced ginger
1 cup chopped tomatoes
One and a half cups skinned gabi
½ kilo cooked pork adobo
½ cup labanos, sliced diagonally
½ cup sliced okra
½ cup sitaw, cut into 3” length
2 11g packs MAGGI Sinigang sa Sampalok Original Mix
1 bundle camote tops

Procedure:

1. In stockpot, combine water, onions, ginger and tomatoes. Bring to a boil for at least 10 minutes to extract flavor.
2. Add gabi and pork adobo. Simmer until gabi is tender.
3. Add the rest of vegetables, followed by MAGGI Sinigang sa Sampalok Mix. Let simmer for 5 minutes more. Remove from heat and add camote tops. Serve hot.

Idol sa Kusina Recipe- Creamy Binagoongan Bagnet

Here's Idol sa Kusina Recipe for Episode 66 / Oct. 21-Creamy Binagoongan Bagnet.

Ingredients:
1 kl. Pork Belly; cut into desired pieces
1 ltr. Cookig oil
½ ltr. Water
Salt to taste
Water 

Procedure:
1. In a stock pot, bring water to a boil w/ added salt. Drop pork and boil until tender. Drain and hang dry, then set aside.
2. Submerged pork in hot cooking oil until brown. Drain and dry in paper towel until completely cool.
3. Reheat cooking oil. Submerged pork in very hot cooking oil for while, strain and sprinkle with cold water. Do this process several times until skin pops. Remove from fire and serve.

Ingredients and Procedure for Creamy Binagoongan:

½ cup Shrimp Bagoong
4 cloves garlic; minced
1 small onion; chopped
1 medium tomato; sliced in 8 pcs.
1 tsp siling labuyo
5 tbsp vinegar
½ tbsp sugar
10g spring onion

4. Sauté garlic, onion and tomato. Add shrimp bagoong, stir-fry for few minutes.
5. Add vinegar and siling labuyo, simmer for 5 minutes. Season with sugar, and drop the bagnet, continue cooking in low fire until done.
6. Place on plate garnish with spring onion.

Idol sa Kusina Recipe- Italian Lime Soda


Here's Idol sa Kusina Recipe for Episode 65 / Oct. 14 Italian Lime Soda- use shaker.

Ingredients:
2 1/2 cup soda water
1/2 cup lime juice
1/3 cup condensed milk
Ice cubes

Procedure:
1. Mix soda water, lime and condensed milk in a shaker 2. Pour onto glass and add ice.

Idol sa Kusina Recipe- MAGIC CHILI CHICKEN PASTA

Here's Idol sa Kusina Recipe for Episode 65 / Oct. 14- MAGIC CHILI CHICKEN PASTA.

INGREDIENTS
2 tbsp annatto oil
1 tbsp chopped garlic

¼ cup chopped onion
1 cup chopped tomatoes
¼ kg chicken breast fillet, shredded
¼cup Chilli Sauce
1 85-gram can liver spread
1 8-gram sachet MAGGI MAGIC SARAP
1 cup water
1 pack All Purpose Cream
pepper to taste
250 grams penne, cooked al dente

PROCEDURE
1. Heat butter in a large saucepan. Saute garlic, onions and tomatoes until limp. Add chicken, Chilli Sauce, liver spread and MAGGI MAGIC SARAP and cook for 2 minutes.
2. Pour in water and bring to a boil. Lower heat then pour in all purpose cream. Season with pepper to taste. Toss in cooked penne until fully coated in sauce.

Here's Idol sa Kusina Recipe for Episode 65- Oct. 14- ROAST BEEF SANDWICH.

INGREDIENTS:

12 pcs. cheddar slices
1 box/pack of cream cheese
About 10 leaves of parsley, finely 
chopped 
1 (12-oz.) package bacon, cooked
12 slices Gardenia White Bread
12 oz. thinly sliced cooked roast beef
1 head green leaf lettuce, separated
2 tomatoes, thinly sliced
1 tbsp. chopped fresh spring onions

Procedure:

1. Mix chopped herbed and softened cream cheese. Set aside.
2. fry bacon. Set aside
3. To assemble sandwich; layer cream cheese mixture, roast beef, bacon, lettuce, tomato, cheddar slice and chopped fresh spring onions between two slices of Gardenia white bread.
4. Assemble the other sandwiches.

Idol sa Kusina Recipe- FINGER FOODS

Here's Idol sa Kusina Recipe for Episode 65 / Oct. 14- FINGER FOODS.

MOZZARELLA STICKS

INGREDIENTS:

1 ½ cup Italian – style dried breadcrumbs
1 1/3 cups freshly grated parmesan
1 tsp. salt
2 (16 ounce) blocks pasteurized mozzarella cut into 4 by ½ inch sticks
4 large eggs, beaten to blend
1 ½ cups vegetable oil
4 cups marinara sauce, recipe follows

PROCEDURE:

1. Stir the breadcrumbs, 1 cup of parmesan and 1 tsp. of salt in a medium bowl to blend.
2. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl.
3. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet.
4. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time.
5. Cover and freeze until frozen, about 2 hours and up to 2 days. Heat the oil in a large frying pan over medium heat.
6. Working in batches, fry the cheese until golden brown, about 1 min. per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the marinara sauce (bottled).

MOJOS

INGREDIENTS:
1 kg potatoes (Idaho or any baking potatoes)
½ cup milk
1 tsp. salt
200 g instant fried chicken breading mix
1 lt.oil for deep frying

PROCEDURE
1. Half blanch the potato, then mix into milk, salt, dredge into bread
crumbs.
2. Deep fried until golden brown, then serve while hot.

CRISPY SHRIMP POPPERS RECIPE

INGREDIENTS:
20 uncooked medium shrimp, peeled and deveined
4 ounces cream cheese, softened
10 bacon strips
1 cup all – purpose flour
2 eggs, lightly beaten
2 cups panko (Japanese) bread crumbs
Oil for deep – fat frying

PROCEDURE
1. Butterfly the shrimp along the outside curves. Spread about 1 tsp.
cream cheese inside each shrimp. Cut bacon strips in half lengthwise;
wrap a piece around each shrimp and secure with tootpicks.
2. In three separate shallow bowls, place the flour, eggs and bread
crumbs. Coat the shrimp with flour; dip into eggs, then coat with bread
crumbs.
3. In a electric skillet or deep – fat fryer, heat oil at 375˚. Fry
shrimp, a few at a time, for 3 – 4 minutes or until golden brown. Drain
on paper towels. Discard tootpicks before serving. Yield: 20 appetizers.

Rue Bourbon of Jodi Stamaria featured on Kris TV

Rue Bourbon Bar and Restaurant of Jodi Stamaria in East Wood was featured on Kris TV on October 12. Rue Bourbon is a Pub and Restaurant that specializes in New Orleans Cuisine and wild exciting drinks!. The name is French for Bourbon Street. The world famous street in New Orleans where there are countless bars, tattoo parlors, and the likes are alongside each other catering to thousands of tourists looking for hella good time. It is also famous for its street parties and yearly Mardigras parade. It has been a dream of the owners of Rue to bring even just a little bit of that here in the Philippines.

Jodi Stamaria is the lead sta of the hit ABS-CBn teleserye "Be Careful With My Heart" as Maya Del Rosa opposite Richard Yap. Richard Yap is a Filipino-Chinese actor and businessman, best known for his role as "Papa Chen" in My Binondo Girl and in the 2012 Philippine television drama Be Careful With My Heart as "Sir Chief".

Idol sa Kusina Recipe- ALL PURPOSE SPONGE DESSERT


Here's Idol sa Kusina Recipe for Episode 63 / Sept.30- ALL PURPOSE SPONGE DESSERT.

INGREDIENTS:
1 ½ cup all purpose flour
7 pcs. Egg yolk
½ cup granulated sugar
1/3 cup water
Pinch of salt
2 tsp. vanilla
7 pcs. Egg white
1/8 tsp. cream of tartar
¾ cup granulated sugar

PROCEDURE:
Sift flour set aside, beat eggyolk & sugar medium speed, add water slowly follow salt & vanilla continue mixing until double volume then add flour, set aside. Beat eggwhite in high speed w/cream of tartar, add sugar slowly while mixing, until stiff. Then fold to the flour mixture, pour in roll pan 10x2 bake at least 12 to 15 minutes.

Idol sa Kusina Recipe- MAGICAL CAMARON REBUSADO

Here's Idol sa Kusina Recipe for Episode 64- MAGICAL CAMARON REBUSADO.

INGREDIENTS:
1kg large shrimp or medium prawns, peeled (tail on) and deveined
2 packs 8g Maggi Magic Sarap
¼ cup flour

Batter:
1cup All-purpose flour
2pcs Egg, beaten
1Tsp Baking powder
As needed Iced water
2 Liter Oil, for deep frying
Sweet chili sauce

PROCEDURE:
1. Prepare batter by whisking flour, baking powder, egg and iced water to make pancake batter consistency.
2. Season shrimp or prawns with MAGGI MAGIC SARAP and lightly coat with flour and dip in batter while holding the tail end.
3. Carefully drop in a preheated oil and fry over medium high heat for 2minutes or until golden brown.
4. Drain excess oil and serve with sweet chili sauce.

Idol sa Kusina Recipe- ORGANIC VEGGIE SALAD WITH GRILLED BEEF

Here's Idol sa Kusina Recipe for Oct. 7- Episode 64- ORGANIC VEGGIE SALAD WITH GRILLED BEEF.

INGREDIENTS:

1 large red onion, peeled and cut into thin rings
500 g beef (1 lb) beef tenderloin, roasted and grilled, sliced thinly
200 g leafy green lettuce, leaves separated and rinsed well
4 spring onions, chopped
1 medium cucumber sliced
1 medium tomato, cut into small wedges
2 springs coriander leaves
1 sprig mint leaves

FOR DRESSING INGREDIENTS:

2 cloves garlic, peeled
5 fresh red finger – length chillies, seeds removed
1 bunch coriander leaves, rinsed and chopped
1 tbsp. sugar
2 tsp. fish sauce
1 tbsp. lime juice
½ tps. Salt
½ tsp. freshly ground black pepper

PROCEDURE:

1. Prepare the Dressing by grinding the garlic, chillies, coriander
leaves and sugar to a fine paste in a mortar. Transfer the paste to a
small bowl and stir in the fish sauce, lime juice, sugar, salt and black
pepper. Stir in the onion rings and sliced beef and set aside for about
15 minutes to marinate.
2. Arrange the lettuce leaves on a large serving dish and spread the marinate meat on top of the leaves. Arrange the spring onions, cucumber slices and tomato wedges on the lettuce leaves. Garnish with the coriander and mint leaves and serve.

Cooking shows seems to be the trending shows locally with Chef Boy Logro having two shows, Kusina Master on GMA and Idol sa Kusina on GMA News TV, while Regine Velasquez has her own cooking show "Sarap Diva" every Saturday on GMA.

Sarap Diva Recipe- Braised Porkloin Rack

Here's Sarap Diva Recipe- Braised Porkloin Rack. 

INGREDIENTS:
1 kg pork loin with rack or bones
2 ¼ cup soy sauce
150 g roughly cut garlic
100 g white onion
10 g black peppercorn
4 pcs bay leaves
¼ cup cooking oil
1 cup vinegar
1 cup water
½ tsp salt
½ tsp pepper

To cover, use aluminum foil 8' x 24"

PROCEDURE:
1. Marinate pork loin all ingredients into a baking roasting pan, then cover with aluminum foil.

2. Have ready heated oven 150 °, then roast in oven for 3 hours or until tender.

3. Cut into four pieces then thread the bones of each slice of pork loin on top. Spoon over the top with the remaining adobo sauce.

4. Place on plate. Garnish with green pea sprouts.

Zac Efron earlier guested on "The Ellen DeGeneres Show" and talked about his most recent trip in the Philippines as was one of the best trip of his life. Aside from the warm welcome he received from his Pinoy fans, his wonderful experiencing having been flew by a chopper to the top of an active volcano and had lunch on top of it, the "Paperboy" star now talks about how he ate balut (a Pinoy delicacy made of fertilized duck embryo, boiled and eaten in the shell) during his recent guesting on Jimmy Kimmel Live to promote his latest movie with Nicole Kidman.

Here are some photos we took on Kitakits during our visit last October 5, 2012. All menus are good but we like the "lechon kawali" the most. We enjoy the ambiance and the stand-up comedian who perform during that day.
