Unang Hirit- Arroz Valenciana

Unang Hirit Kitchen Hirit Recipe of the Day-October 30, 2013: Arroz Valenciana with Ms. Virginia Pascual.

Ingredients:
  • Malagkit
  • Annato oil (mixture ng astuete at vegetable oil)
  • Bawang
  • Sibuyas
  • Manok 
  • Hotdog
  • Atay
  • Patis
  • Tomato sauce
  • Gata
  • Bell pepper
  • Itlog

Procedure:
1. Igisa ang bawang, sibuyas sa annato oil.
2. Ihalo ang chicken cubes, patis, tomato sauce at coconut cream.
3. Isunod ang mga karne at kanin.
4. Haluin ng mabuti.
5. Idagdag ang bell pepper at pasas.
6. I-garnish with hard boiled egg at i-serve.

Unang Hirit Recipe- Halloween Treats

Unang Hirit Kitchen Hirit of the Day: Halloween Treats with Chef John Robin Pecson.

Treat#1: Graveyard Chocolate Mousse
Ingredients:
Whipped cream
Chocolate
Crushed cookies
Broas

Procedure:
1. Patigasin ang whipped cream.
2. Tunawin ang tsokolate at ihalo sa whipped cream.
3. Maglagay ng chocolate mousse sa baso/shot glass.
4. Ilagay ang crushed cookies, broas.

Treat #2: Chocolate Eyeballs
Ingredients:
Crumbled chocolate fudge cake w/ chocolate ganache
Melted white chocolate
Melted blue chocolate
Melted red chocolate

Procedure:
1. Gumamit ng mixer para ihalo ang crumbled chocolate cake at chocolate ganache.
2. Gawing chocolate balls ang cake.
3. Ilubog ang chocolate balls sa melted white chocolate at patuyuin.
4. Lagyan ng melted blue chocolate ang covered chocolate cake para makagawa ng mga mata at black chocolate naman para maging pupil.
5. Lumikha ng eye veins mula sa melted red chocolate.

Treat #3: Witch Head Mallows
Ingredients:
Big white chocolate mallows
Chocolate flat biscuit
Melted dark chocolate
Coloured crystal sugars
Flat tops chocolate and kisses

Procedure:
1. Gumamit ng mallows para maging ulo at melted chocolate naman para sa mga mata at ilong.
2. Isalansan ang biskwit, chocolate tops at teardrop-shaped na tsokolate para maging sombrero.

Treat #4: Chocolate Covered Cherry Mice
Ingredients:
Cherries with stem
Melted dark chocolate
Pecan nuts
Chocolate kisses
Colored crystal sugar

Procedure:
1. Ilubog ang cherries kasama ang tangkay nito sa melted dark chocolate.
2. Bumuo ng hugis daga. Lumikha ng ulo mula sa teardrop-shaped chocolate.
3. Lagyan ito ng mga mani para makabuo ng tenga.
4. Gumawa ng mga mata mula sa asukal.

Treat #5: Giant Chocolate Spiders
Ingredients:
Chocolate cupcakes/ chocolate domes
Melted milk chocolate
Melted white chocolate

Procedure:
1. Lumikha ng gagamba mula sa cupcake/dome bilang katawan.
2. Gumamit ng melted milk chocolate para makabuo ng mga binti o galamay.
3. Gamitin ang white chocolate para maging mata.

1. Ilagay ang nabalatan na tubo sa ilalim at loob ng palayok.
2. Isama ang karne at iba pang mga sahog sa palayok.
3. Dagdagan ng tubig ang palayok para sa sabaw.
4. Pakuluan ito hanggang sa lumambot ang karne.
5. Pag malambot na ang baboy at tama na ang lasa, hanguin ito mula sa kalan at takpan ng dahon ng saging ang palayok. 
6. Ilagay ito sa refrigerator dahil habang tumatagal ito ay lalong sumasarap.

Ingredients:
  • 8pcs large strawberries
  • 400g white chocolate
  • 300g bittersweet chocolate

Procedure:
1. Wash and pat dry strawberries.
2. Melt bittersweet and white chocolates in 2 seperate double boilers.
3. Dip strawberries in white chocolate and set aside until it sets.
4. Using a parchment cone, use the bittersweet chocolate to pipe the eyes and mouth of the scary strawberries. Chill to set before serving.

Ingredients:
  • 3pcs taco shells
  • 3pcs soft shell taco
  • 2 tbsp Oil
  • 300g Ground beef
  • 1 1/2 tbsp Cumin powder
  • 1 pc Onion
  • 3 cloves Garlic
  • 3pcs Tomatoes
  • 2 pcs Bell pepper (red and green)
  • 1 cup Cheese slices 
  • 1/2 head Iceberg lettuce
  • 1 cup Sour cream, serve on the side

Procedure:

Heat the beef until it starts steaming and place one to two tablespoons of it as the filling inside a taco shell.
Add shredded lettuce, onions, tomatoes and top with cheese and sour cream. Repeat for all tacos. Now, serve immediately.

Ingredients:
  • 1 1/2 cups warm water 
  • 1 package (2 1/4 teaspoons) of active dry yeast
  • 3 1/2 cups all purpose flour
  • 2 Tbsp olive oil
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 2 tbsp Oil 
  • 1 tbsp Butter
  • 1 white Onion
  • 3 cloves garlic
  • 1 1/2 cup Tomato sauce
  • ½ tbsp Oregano
  • 1 /2 tbsp Sugar
  • Salt and pepper to taste
  • 1 ½ cup Mozzarella cheese, grated
  • 12 pcs Black olives, halved
  • 2 sprigs Fresh rosemary (spider legs)
  • 200g Cooked ground beef
  • 1 cup button mushrooms
  • 1 pc Bell pepper

Procedure:

1. For the dough, combine yeast with ½ cup of water and leave for 15 minutes.

2. Combine all dry ingredients then the wet ingredients and mix. Knead until dough is smooth.

3. Let it rest for 45minutes.

4. While waiting, make the tomato sauce by sautéing onion, garlic, oregano in oil and butter. Then add tomato sauce and season with salt, pepper and sugar.

5. Assemble the pizza, pour the tomato sauce onto the pizza dough and form the cheese into ghost figures and add small olives for the eyes and mouth. Add spider olives, bell peppers, mushrooms and ground beef then bake until cheese melts and dough is browned.

Kusina Master Recipe- KABUTE with BANGUS BELLY (PINAIS NA MAY ISDA)

Here's Kusina Master Recipe on October 25-FRIDAY Recipe: KABUTE with BANGUS BELLY (PINAIS NA MAY ISDA).

INGREDIENTS:
  • 500 grams Kabute Mushroom
  • 500 grams Bangus Belly 
  • 1 kilo Banana Leaves
  • 4 pieces Fresh Tomato Slices
  • 2 pieces Red Onion cut into round slices
  • 1/2 cup Calamansi Juice
  • 1 tsp Rock Salt 
  • 1/2 tsp Crushed Peppercorn 
  • 2 tbsp Olive Oil

DIRECTIONS:

* Marinate bangus belly in calamansi juice for 30 minutes
* Blanch banana leaves then place kabuti on top of all the vegetables
* Lay the bangus belly in the middle of the banana leaves putting some of the vegetables, spice mixture under the fish and on top of the fish.
* Wrap the fish sealing ends w/ toothpick.
* Grill until banana leaves are charred approximately about 30 minutes.

Ingredients:

  • Red / green bell pepper

  • Sweet tomato / banana ketchup

  • Luya
  • Corn starch
  • Asukal
  • Mantikilya
  • Harina

Procedure:
1. Ibabad ang fish fillet sa asin, paminta at katas ng kalamansi. Hayaan ng mga 15 minuto.
2. Magpakulo ng mantika sa kawali.
3. Unang i-prito ang tokwa. Hayaang maluto hanggang sa mag-golden brown ang kulay.
4. Habang piniprito ang tokwa, ihalo na ang itlog at harina sa fish fillet. Haluing mabuti hanggang sa mabalutan lahat ng isda ng itlog at harina.
5. I-prito ito pagkatapos ng tokwa.
6. Alisin ang mantikang pinag-prituhan.
7. Ilagay ang butter at igisa ang luya, bawang at sibuyas.
8. Ilagay na rin sabay-sabay ang carrots at bell pepper. Stir-fry muna ng mga 1 minuto.
9. Ilagay ang catsup at yung sabaw ng pineapple chunk. Halu-haluin.
10. Timplahan ng asin, paminta at asukal.
11. Huling ilagay ang pineapple chunk at tinunaw na corn starch. Maaaring lagyan ng tubig depende sa lapot ng sauce na nais.
12. Paghaluin ang nilutong fish fillet at tokwa. Ibuhos sa ibabaw ang nilutong sweet and sour sauce.

Kusina Master Recipe- CRISPY DINUGUAN

Here's Kusina Master Recipe- CRISPY DINUGUAN.

INGREDIENTS:
  • 500g. Crispy Pork Belly 
  • 1kilo Pork Blood
  • 300g. Cleaned Pork Intestine 
  • 300g. Crispy Pork Ears 
  • 4pcs. Siling Haba (Chopped) 
  • 1cup Chopped Red Onion 
  • 50g. Chopped Garlic 
  • 50g. Chopped Ginger
  • 1/4 cup Cooking Oil 
  • 2 cups Vinegar 
  • 5 stalk of Lemon Grass (Tanglad)
  • 30g. Local Oregano 
  • 30g. Fresh Basil

COOKING PROCEDURE:

* Sauté the garlic and onion in a cooking pot.

* Add the pork intestine, pork ears, salt, ginger, oregano and stir fry for about 10 minutes under medium heat then add lemon grass.

* Followed by a cup of water.

* Simmer for 10 minutes or until the water is almost gone to tenderize the meat.

* Add the pork blood, vinegar, chili and mix well. Let this simmer for 10-15 minutes or until sauce is dry.

* Prepare your pan for deep frying. Heat the oil until just before it starts to smoke.

* fry pork belly until golden brown on the outside.

* Once the meat has cooled a bit, slice the crispy pork belly and top with dinuguan.

* Put chopped fresh basil on top.

1. Pakuluan ang balut sa loob ng 30-40 minuto.

4. Maglagay ng isang tasang tubig at takpan.

Idol sa Kusina Recipe- BANGUS BELLY PAKSIW WITH FRIED RICE & HOT COFFEE

Here's Idol sa Kusina Recipe for Episode 111/Sept. 29, 2013 airing- BANGUS BELLY PAKSIW WITH FRIED RICE & HOT COFFEE.

Ingredients:
1/2 kilo Bangus Belly
4 cloves garlic, crushed
1 thumb size ginger cut into thin slices
1 red onion, quartered
1/2 tbsp. whole black pepper
1/4 cup vinegar
2 pcs finger chili
1 small ampalaya, sliced
2 small eggplants, sliced diagonally
2 tbsp cooking oil
1 tbsp patis

Procedure:
1. Wash fish thoroughly drain and slice diagonally. 
2. In a casserole put garlic, onion and ginger at the bottom. 
3. Arrange sliced bangus side by side. 
4. Add 1 cup of water and 1/4 cup vinegar or 3 tbsp. sampalok sinigang mix. 
5. Put on top vegetable, green sili and black pepper. 
6. Season with salt and drizzle with cooking oil. 
7. Cover and simmer in a medium heat for 8–12 minutes or until fish is cooked then add the coffee mate.
8. Serve hot with Sinangag rice.

Sinangag or FRIED RICE:

3 cups left over rice
2 tbsp oil
5 cloves garlic, minced
salt an pepper to taste
spring onion for garnish
fried garlic for garnish

1. In a wok, heat oil and add garlic.
2. When almost brown, add the rice and toss well. Season with salt and pepper. Garnish with spring onion and fried garlic and serve.

COFFEE:

Ingredients:
1 cup hot water
1 1/2 cup fresh milk 
3 tbsp black coffee
3 tbsp muscovado 

Procedure
1. In a pot, boil water then add ground coffee and muscovado sugar.
2. Lastly add the milk and simmer.
3. Pour into mugs and serve with sinangag and paksiw

Idol sa Kusina Recipe- GINATAANG TAWILIS & FRIED TAWILIS WITH ASSORTED DIPS

Ep.111 / Sept. 29, 2013- TAWILIS DUO - GINATAANG TAWILIS & FRIED TAWILIS WITH ASSORTED DIPS.

GINATAANG TAWILIS:

Ingredients:
¼ kilo tawilis, cleaned
3 cloves garlic, minced
1 thumbsized ginger, pounded
1 ½ cup coconut milk
3-4 pcs finger chilies, sliced½ teaspoon patispinch of ground black pepper

Procedure:
Place all ingredients in a skillet or small pot.
Place the skillet or pot on the stove and bring to a boil.
Lower fire and simmer for no more than 2 minutes. It is important that you do not simmer for longer than recommended as the meat of the fish is very tender.

FRIED TAWILIS WITH ASSORTED DIPS:

Ingredients
1/4 cup tawilis, cleaned
salt and pepper to taste
1/2 cup flour
1/2 cup cornstarch
oil for deep frying

Vinegar Dipping Sauce:
1/2 cup vinegar
1 pc lime, juiced
2 cloves garlic, minced
1 pc labuyo, chopped
1 tsp patis
1/2 pc red onion, chopped
pepper to taste

- Combine all the ingredients in a bowl and set aside. 

Tomato Ensalada:
3 pcs native tomatoes, diced
1 pc red onion, diced
2 pcs finger chili, sliced
salt and pepper
1 tbsp spring onion, chopped
1 tbsp cilantro, chopped
2 cloves garlic, minced
1 pc roasted eggplant, chopped

- Combine all the ingredients in a bowl and set aside.

1. Sa isang kawali, igisa ang luya, bawa at sibuyas.
2. Idagdag ang siling pansigang at ang mga halaan. Hayaan itong kumulo hanggang sa bumukas ang shell ng halaan.
3. Dagdagan ito ng 3-4 na tasang tubig at muling pakuluin.
4. Isama ang sotanghon at hayaang kumulo sa loob ng 3-5 minuto.
5. Timplahan muli ayon sa panlasa.
6. Ihulog ang dahon ng sibuyas at malunggay at saka hanguin.

Procedure:
1. I-marinate ang bagnet sa 5 spice powder, pineapple juice at star anise ng 1 oras. Huwag itapon ang pinangmarinate.
2. After i-marinate, igisa ang bawang, sibuyas at bagnet.
3. Ilagay ang tomato paste at yung pinangmarinate, toyo, brown sugar at konting tubig.
4. Pakuluin lang at medyo palaputin at saka lagyan ng sesame oil.
5. Matapos itong maluto, ilagay sa plato.

Kusina Master Recipe-PERFECT YANG CHOW

INGREDIENTS:
  • 5 cups cooked rice
  • 50 g. cooked ham 
  • 50 g. peeled shrimps 
  • 100 g. sweet peas 
  • 50 g. crab meat/sticks 
  • 5 clove garlic minced 
  • 1 onion chopped 
  • 2 eggs
  • soy sauce 
  • salt 
  • oil 
  • spring onions

DIRECTIONS: 

* In the pan, pour oil
* Saute garlic, onion
* Add ham, shrimps and sweet peas then stir cook for another minute.
* Add cooked rice, soy sauce then mix until rice is well coated.
* Pour eggs then continue stirring until the egg is cooked.
* Season with salt and pepper according to taste.
* Transfer to serving plate and garnish with chopped spring onions.

Procedure:
1. Initin ang mantika at ilagay ang atsuete hanggang makuha ang kulay nito.
2. Tanggalin ang atsuete at igisa ang bawang, sibuyas at kamatis. 
3. Isama na sa lutuan ang manok at lutuin hanggang sa magka kulay. 
4. Ilagay na ang liver, chorizo, bell pepper, paprika at tubig.
5. Pakuluin hanggang maluto ang manok.
6. Ihalo na rin green peas, patatas, raisins.
7. Timplahan na ng patis, kaunting asin at pepper.

1. Timplahan ang hiniwang plapla ng asin.
2. Iprito ito nang nakalubog sa mantika.
3. Igisa ang sibuyas, kamatis, luya at mga dahon ng alagaw.

Idol sa Kusina Recipe- FROZEN MANGO-BANANA SMOOTHIE

1. In a blender, put all the ingredients and blend until smooth.
2. Serve.

Here's Idol sa Kusina Recipe for Episode 113/Oct. 13, 2013- SAVORY FRENCH TOAST CASSEROLE.

Ingredients:
  • 8 pcs loaf bread
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1/3 cup sugar
  • 2 pcs egg, beaten
  • dash of cinnamon
  • 1/2 cup quick melting cheese, grated
  • 1 cup bacon, cut into 1 inch cube
  • 1/2 cup ham, cut into 1 inch cube
  • 2 pcs tomatoes, sliced
  • 1 pc white onion, diced
  • 1 pc apple, diced
  • fresh basil for garnish, chiffonade

Procedure:
1. In a pan, cook bacon until lightly brown, then add the ham, tomatoes, onion and apples. Season with pepper and set aside.
2. In a bowl, combine milk with cinnamon and sugar. Then dredge the bread in milk mixture, then beaten eggs and layer onto the baking dish.
3. For the middle layer, add the cooked bacon, ham and diced apples.
4. Then add another layer of dredged bread as the top layer.
5. Finally, sprinkle grated quick melting cheese and place in a preheated oven (375 degrees) until cheese is golden brown.
6. Garnish with some fresh basil and serve.

Idol sa Kusina Recipe- CRUSTLESS QUICHE

Here's Idol sa Kusina Recipe- Episode 113/Oct. 13, 2013- CRUSTLESS QUICHE.

Ingredients: 

1 teaspoon olive oil, or as needed
1 tablespoon olive oil
1 white onion, minced
3 cloves garlic, minced 
3 cups chopped spinach
salt and pepper to taste
1 cup diced tomato
1/2 cup shredded carrots
5 eggs
3/4 cup milk
1 cup shredded cheddar cheese 
1/4 cup chopped parsley

Procedure:
1. Preheat oven to 350 degrees F (175 degrees C). Grease a pie dish with 1 teaspoon olive oil.
2. Heat 1 tablespoon olive oil in a pan over medium heat; cook and stir onion and garlic in the oil. Add spinach, salt, and pepper; cook, stirring occasionally, until spinach is wilted. Stir tomato and carrots into spinach mixture; cook for 3 minutes. 
3. Remove pan from heat. Whisk eggs and milk together in a bowl. Stir cheese, spinach mixture, and parsley into egg mixture; pour into the prepared pie dish.
4. Bake in the preheated oven until quiche is set in the middle and a knife inserted in the center comes out clean, about 45 minutes. Cool in pie dish for 2 to 3 minutes before slicing.

Idol sa Kusina Recipe- POACHED SALMON SALAD WITH CREAMY VELOUTE SAUCE

Here's Idol sa Kusina Recipe for Episode for 113/Oct. 13, 2013- POACHED SALMON SALAD WITH CREAMY VELOUTE SAUCE.

Ingredients:
  • 2 shallots, thinly sliced
  • 1 pc lemon, sliced
  • 400g skinless salmon fillet
  • 1 cup dry white wine
  • 2 cups water
  • 1/4 cup mayonnaise
  • 1 tbsp mustard
  • 2 tablespoons olive oil
  • Salt
  • Freshly ground white pepper
  • (1/4 cup poaching liquid)
  • parsley for garnish
  • 100g asparagus spears, trimmed and blanched 
  • 100g cherry tomatoes, halved
  • 1/2 head romaine lettuce, torn into bite size pieces
  • 2 pcs eggs, hard-boiled, quartered
  • 1 pc cucumber, sliced thinly

Procedure:
1. Put the shallots and lemon in a saucepan and top with the salmon. 
2. Add the wine and 2 cups of water; bring to a boil. Simmer over very low heat until the salmon is nearly cooked through; transfer to a plate and break the salmon into large flakes and freeze for 5 minutes to cool.
3. Meanwhile, strain the poaching broth, reserving 1/4 cup of the broth and 2 tablespoons of the shallots; discard the lemon. 
4. Chop the shallots and transfer to a large bowl. Add the mayonnaise, mustard, then whisk in the reserved poaching broth and the oil and season with salt and pepper.
5. Toss half of the salmon with the rest of the vegetables and half of the dressing.
6. Transfter to a plate and top salad with the remaining half of the salmon and dressing. Garnish with parsley.

McDonalds Happy Meal book promotion

McDonalds will distribute Happy Meal books starting November. The promotion will run for two weeks starting November 1st and ending on the 14th. Twenty millon books will be provided to Happy Meal customers across the United States.

“In time for National Family Literacy Day on Nov. 1, McDonald’s USA is inviting families to celebrate the joy of reading with the launch of a new Happy Meal Books promotion,” McDonalds said in a statement. The company revealed that the all-original limited-edition books include “The Goat Who Ate Everything,” which tells a story of a goat who has a big appetite and struggles to eat right but when he does, he feels great and becomes the playful ‘kid’ everyone loves, and “Deana’s Big Dreams” featuring the world’s smallest dinosaur, Deana, who grew tall by eating right. The four books will feature McDonald’s Happy Meal characters. 


“We’re excited to invite families to spend time together and celebrate the joy of reading through these fun and original Happy Meal Books,” McDonald’s USA vice president of marketing Ubong Ituen said. “This is the latest step in our ongoing efforts to enrich the lives of families, and part of a broader book strategy that will combine the fun of the Happy Meal, new partners and technology to inspire more family reading time.”

Procedure:
1. Ilaga ang atay ng manok at balumbalunan.

Procedure:
1. Sa isang kawali, maggisa ng sibuyas at kamatis. 
2. Idagdag ang hiniwang patatas at carrots. Hayaan itong maluto sa loob ng 3-5 minuto.
3. Isama ang siling panigang at ang hinimay na crabmeat. Hayaang maluto sa loob ng 2 minuto.
4. Ihulog ang parsely, garlic powder, asin at paminta. Haluin at palamigin. 
5. Pag malamig na ang crab mixture, haluan ito ng bread crumbs at itlog. 
6. Ipalaman ang crab mixture sa crab shell.
7. Iprito ang mga stuffed crab shell at hanguin ito kapag luto na.

Procedure:
1. Magpakulo ng tubig, ilagay ang bay leaves, pamintang buo, star anise at asin.
2. Pakuluan ang pata sa loob ng isang oras o hanggang lumambot.
3. Pagkakulo itabi ang pata
4. Haguran ng asin at paminta ang pata. Hayaan ang karne ng labing limang minuto para kumapit ang lasa
5. Lutuin sa kumukulong mantik ang pata ng pa-prito
6. Igisa ang bawang at sibuyas. Isama na rin ang taro leaves at coconut. Timplahan ng alamang at haanan

Idol sa Kusina Recipe- Tamarind Tea

Ingredients:
  • 5 pcs fresh sampaloc, boiled and squeezed
  • 3 cups hot water
  • 3 tbsp brown sugar
  • 2 tbsp lime juice

1. In a pot, boil water and add brown sugar until dissolved. 
2. Then pour tamarind juice and add lime juice last. Serve.

Idol sa Kusina Recipe- STIR FRIED INSTANT MAMI

Here's Idol sa Kusina Recipe for Episode 112/Oct. 6, 201- STIR FRIED INSTANT MAMI.

Ingredients: 
  • 3 packs instant mami 
  • 2 tbsp oil
  • 1 tbsp ginger
  • 1 tbsp chili garlic
  • 1/4 cup hoisin
  • 1 tsp sesame oil
  • 250g chicken breast, sliced thinly
  • 1/2 pc red bell pepper
  • 1/3 cup oyster mushrooms, sliced
  • 1/3 cup spring onions, chopped
  • 1/2 pc fresh orange juice
  • 1 tsp orange zest
  • splash of water
  • 1/2 cup peanuts, roughly chopped

Procedure:

1. Boil instant noodles in water until cooked. Set aside.
2. Saute ginger in oil, add chicken and cook.
3. Add the mushrooms, bell peppers, orange zest, sesame oil and noodles. 
4. Stir fry for a minute then pour the hoisin sauce, chili garlic sauce, orange juice and add water if sauce is too thick.
5. Top with peanuts and spring onions. Serve hot.

Idol sa Kusina Recipe- Japanese Ramen

Here's Idol sa Kusina Recipe for Episode 112/Oct. 6, 2013- JAPANESE RAMEN.

Ingredients:
  • 300g fresh ramen noodles
  • 250g pork belly, sliced 1 1/2” thick
  • 1/2 inch ginger, minced
  • 3 garlic cloves, minced
  • 2 shiitake mushrooms, sliced
  • 2 stalks leeks, sliced
  • 1 Tbsp. sesame oil
  • 1 Tbsp. Chili Bean Paste (Doubanjiang)
  • 1 package dried bonito flakes

Seasonings:
1 cup water
1 tsp. japanese miso
1 tsp. soy sauce
1 1/2 Tbsp. rice vinegar

Toppings:

Ingredients:
  • 6 shrimps, peeled and deveined (+ 1 Tbsp. sake for boiling)
  • 2 hard boiled eggs
  • 1/3 cup slices of narutomaki
  • 1 package nori
Procedure:
1. In a medium saucepan, heat sesame oil over medium high heat and add ginger and garlic when oil is hot.
2. When fragrant, add chili bean paste and stir.
3. Add the meat and cook until no longer pink.
4. Add the shiitake mushrooms and cook until wilted.
5. Add water and bring to a boil.
6. Using fine sieve, strain out scum if necessary.
7. Lower the heat to medium low and add miso and soy sauce in the soup and simmer for 5 minutes.
8. Add the chopped green onions and rice vinegar. Turn off the heat and set aside.
9. Prepare toppings. In a small saucepan, bring water to a boil. Add 1 Tbsp. sake and shrimp. Once the shrimp starts changing color, turn off the heat and cover to let the remaining heat cook the shrimp . Drain and set aside.
10. For the noodle, cook in boiling water. When done, drain completely and place in ice cold water. Divide the noodles on plates/bowls. Serve all the toppings on the noodles or on a separate plate.
11. Pour the hot soup in a bowl. Serve the cold noodles, toppings, and soup and sprinkle bonito flakes in the soup right before eating.

Unang Hirit Recipe- CHICKEN DUMPLING FRESH NOODLE SOUP

Here's Unang Hirit Recipe for Episoe 112/Oct. 6, 2013- CHICKEN DUMPLING FRESH NOODLE SOUP.

Ingredients: 

Chicken Dumpling:
  • 1 1/2 cups ground chicken
  • 1/2 cup Cilantro, chopped finely
  • 1/2 cup Shrimp, minced
  • 2 tbsp Vegetable oil
  • salt and white pepper to taste
  • 2 tbsp Soy sauce
  • wanton wrapper

Noodle Soup:
  • 2 tbsp canola oil
  • 1 tsp sesame oil
  • 3 garlic cloves, minced
  • 3 tablespoons tahini (sesame seed paste)
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon sugar
  • 1 tablespoon seasoned rice vinegar
  • 1 1/2 teaspoons chili-garlic sauce
  • 1/2 chinese cabbage, chopped
  • 6 spring onions, thinly sliced
  • 6 cups chicken broth
  • 300g fresh noodles
Preparation
1. Prep the chicken dumpling, combine first 6 ingredients in a bowl and wrap in wanton wrapper. Set aside. 
2. For the noodle soup, whisk garlic, tahini, ginger, sugar, vinegar, and chili sauce in small bowl.
3. Heat canola and sesame oil in heavy large pot over medium-high heat. Add cabbage and green onions and sauté until cabbage is tender. 

4. Add broth and bring to boil. Add chicken dumplings and tahini-garlic mixture. Reduce heat to low and simmer until chicken is cooked through, about 10 minutes. 
5. Cook noodles in large pot of boiling salted water until tender, about 5 minutes. Drain. Add to soup in pot. Stir in half of cilantro. Season soup with salt and pepper. 
5. Garnish with remaining cilantro. Serve hot.

Ingredients:
  • pork pata
  • toyo
  • fruit cocktail syrup
  • pamintang buo
  • dahon ng laurel
  • star anise o cinnamon stick
  • sesame seed o linga
  • sesame seed oil

Procedure:
1. Pakuluan ang pata at itabi.
2. Sa isang kawali, pagsamahin ang toyo at fruit cocktail syrup.
3. Dagdagan ito ng star anise o cinnamon stick, pamintang buo at dahon ng laurel.
4. Kapag malapot na ang sarsa, ibuhos ang sauce sa nilutong pata at i-marinate ito.
5. Pagkatapos i-marinate, takpan at pakuluin ito sa loob ng isang oras o hanggang sa maging brown ang kulay ng nilulutong pata.
6. Para mas maging malambot ang nilulutong pata, muli itong pakuluan sa loob ng 2 hanggang 2 ½ oras o hanggang maging malabot. 
7. Pag luto na ang pata, ilipat ito sa isang serving platter at lagyan ng sesame oil at sesame seeds.

Ingredients:
  • Bawang

  • Fish stock
  • Puso ng saging
  • Pechay
  • Asin
  • Paminta
  • Itlog
  • Bread crumbs
  • Lemon juice
  • Mantika
  • Bagoong
  • Durog na bigas at mani
  • Talong
  • Sitaw
  • Harina

Procedure:
1. Ihalo ang ginisang bawang at sibuyas sa fish stock o tubig na sakto lamang para maging malapot.
2. Habang niluluto, timplahan ng kaunting asin para magkalasa.
3. Ilagay ang puso ng saging kapag kumulo at isunod ang durog na bigas at mani.
4. Tuluy-tuloy na haluin hanggang sa lumapot ang sabaw.
5. Kapag lumapot na, ilagay una ang talong.
6. Isunod ang sitaw at pinakahuli ang pechay bago lamang patayin ang apoy.
7. Lutuin ang isda na nakahiwang strips pang-fillet. Lagyan ang isda ng asin, paminta at kaunting lemon juice.
8. Balutan ng manipis na layer ng harina sabay isawsaw sa itlog at balutan ng bread crumbs.
9. Ayusin ang fish fillet sa ibabaw ng kare-kare at buhusan ng kaunting sauce.

Ingredients:
  • Balat ng manok chicharon 
  • Bagoong alamang
  • Talong 
  • Bawang 
  • Sibuyas
  • Kamatis
  • Calamansi juice
  • Tubig
  • Asukal na pula 
  • Paminta
  • Siling labuyo 
  • Mantika

Procedure:
1. Sa isang bowl, i-marinate ang manok sa calamansi juice at dried rosemarysa loob ng 15 minuto.
2. I-prito ang talong hanggang maging kulay brown. Set aside.
3. Ogisa ang bawang, sibuyas at kamatis.
4. Sunod na igisa ang manok hanggang maging golden brown.
5. Ilagay ang tubig at bagoong. Pakuluin sa loob ng 10 minuto.
6. Lagyan ng brown sugar, green chili at red chili at pakuluin sa loob ng 3-5 minuto sa mahinang apoy.
7. Idagdag ang pritong talong. Ihain na may kasamang kanin.

Ingredients:
  • lechon kawali
  • canton noodles
  • sayote

  • repolyo
  • corn starch
  • water

  • patis
  • oyster sauce

  • pork broth

Procedure:
1. Magluto ng lechon kawali. Itabi. 
2. Sa isang kawali, igisa ang bawang at sibuyas.
3. Idagdag ang mga hiniwang gulay.
4. Timplahan ito gamit ang seasoning at ang broth o ang sabaw.
5. Pag luto na ang mga gulay, dagdagan ito ng corn starch upang maging malapot ang sabaw.
6. Ihulog ang canton noodles at ang prinitong lechon kawali at hayaang kumulo sa loob ng dalawang minuto.

Procedure:
1. Igisa ang sibuyas, bawang at luya.
2. Isunod sa paggisa ang puso at atay ng baboy.
3. Ihalo ang carrots, red bell pepper at green bell pepper. Isunod ang achuete seeds.
4. Ihalo ang sili, pinya, evaporated milk at laurel.
5. Timplahan ito ng suka, patis at paminta.
6. Lagyan ng isang kutsaritang asukal.
