Idol sa Kusina Recipe- APPLE CINNAMON BRULEE

Here's Idol sa Kusina Recipe for Epiode 122/Dec. 22, 2013- APPLE CINNAMON BRULEE.

Ingredients:
  • 3 Granny Smith apples
  • 1 tablespoon cinnamon
  • 1/4 cup sugar, plus 6 tablespoons
  • 1/4 cup water
  • 6 egg yolks
  • 1 teaspoon vanilla
  • 1 1/2 cups heavy whipping cream

Directions
1. Peel and core apples. Cut into bite sized chunks. Cook the apples in the cinnamon, 1/4-cup sugar, and water. Cook for 7 to 8 minutes until tender, but not mushy. Set aside to cool.
2. Preheat oven to 325 degrees F.
3. Whisk egg yolks and 6 tablespoons sugar. Whisk until light yellow. Add vanilla. While whisking, gradually pour in whipping cream.
4. Divide apples evenly into 6 ramekins. Ladle cream mixture evenly over the apples. Place ramekins in a baking dish. Pour hot water halfway up to the sides of the ramekins. Bake the custard until set, approximately 40 minutes.
5. Keep the ramekins in the water bath and let them cool for about 30 minutes. Remove from water and chill overnight in the refrigerator.
6. Sprinkle sugar on top of creme and then torch until brown.

Idol sa Kusina Recipe- BONE IN JAMON

Here's Idol sa Kusina Recipe for Episode 122 / Dec. 22, 2013- BONE IN JAMON.

Ingredients:
  • 2 kilos pork leg, bone in
  • 4 tbsp white sugar
  • 1½ tbsp salt
  • 1 cup of gin
  • 3 cups pineapple juice

Glaze:
1 cup Pineapple Juice
1 cup brown Sugar
2 tbsp mustard

Directions
1. Boil pork in Pineapple juice, sugar, salt and gin until soft.
2. Let it cool for a few minutes then put ham in a baking tray.
3. Insert cloves alternately into the ham net markings.
4. Make pineapple-brown sugar glaze by mixing brown Sugar, mustard and Pineapple Juice in a sauce pan. Stir until sugar dissolves. Bring it into a boil and simmer until thick.
5. Brush ham with glaze and bake into the oven at 300ºF until bubbly and a little brown.

Idol sa Kusina Recipe- KING FISH (TANIGUE) IN MAYONNAISE

Here's Idol sa Kusina Recipe for Episode 122 / Dec. 22, 2013- KING FISH (TANIGUE) IN MAYONNAISE.

Ingredients:
  • 1 whole tanigue, about 3-4kilo
  • salt, to rub all over the fish
  • 2 pcs lemon, sliced
  • 1 cup red onion, minced
  • 1 cup minced red bell pepper
  • 4 hard-boiled eggs, sliced
  • 1 cup minced carrot
  • 2 cups mayonnaise
  • 1/2 cup sweet pickle relish
  • salt and pepper to taste
  • lettuce for bedding of the fish
  • native tomatoes for garnish

Procedure

1. Rub salt on the inner and outer parts of the fish. and put slices of lemon in the cavity.
2. Pour-in about 1 to 1 1/2 quart water in a roasting pan, place fish ontop of the waterbath and bake.
3. Cook the fish for 1 hour or until done.
4. Remove the fish from the oven and then arrange on a serving plate. Let the excess water drip.
5. Meanwhile, combine mayonnaise, sweet pickle relish, salt, and pepper.
6. When the fish reaches room temperature, spread the mayonnaise mixture over the fish.
7. Arrange the red onion, bell pepper, eggs, and carrots on top of the mayonnaise in the order specified.
8. Serve.

Steamed Moist Chocolate Cake

Ingredients:
  • Butter
  • Asukal
  • Itlog
  • Cocoa powder
  • Baking powder
  • Baking soda
  • Vanilla extract ( vanilla essence)
  • Rum (optional)

Procedure:
1. Pagsamahin ang asukal, vanilla extract o essence at butter.
2. Tunawin ang asukal at butter.
3. Haluin ang butter at itlog.
4. Painitin ang steamer. I-grease ang pan at ibuhos na ang batter mixture.
5. Palamigin ang chocolate cake.

Chocolate fudge topping

Ingredients:
Condensed milk
Vanilla extract/essence
Corn oil
Cocoa powder
Asin

Procedure
1. Pagasamahin ang cocoa powder, condensed milk at corn oil.
2. Idadag ang asin at vanilla extract.
3. Haluing maigi at ihalo na ang toppings sa cake.

Procedure:
1. Timplahan ang manok ng asin at paminta. 
2. Sa isang kaserola, igisa ang bawang at sibuyas sa mantikilya.
3. Idagdag ang ibinabad na manok at dahon ng laurel. Hayaan itong masangkutsa sa loob ng limang minuto. 
4. Timplahan ito gamit ang toyo at kalamansi. Dagdagan ng konting tubig at takpan. 
5. Ilagay ang patatas at atay ng manok. Durugin ito upang maging malapot ang sarsa. Pakuluin ito hanggang sa lumambot ang mga patatas.

Idol sa Kusina Recipe- HOT WHITE CHOCOLATE WITH CINNAMON

  • 4 oz white chocolate, chopped
  • ½ tsp vanilla extract

Procedure:
1. In a small saucepan, heat milk over low heat. 
2. Whisk in white chocolate until melted. 
3. Remove from heat and whisk in vanilla and cinnamon. 
4. Pour into a large mug and garnish with whipped cream and white chocolate curls

Ingredients:

1 kilo beef eye of round or flank steak, 3/4 inch thick in one piece
3 cups beef sotck
1/4 tsp salt
1 piece lemon
1/2 cup soy sauce
1 piece medium sized carrot, cut into long strips
1/2 cup flour
1/2 cup cooking oil
4 pieces hotdogs, cut in half lengthwise
2 pieces pickled dill or sweet pickled cucumber, cut lengthwise divided into 4 equal pieces
3 pieces hard boiled eggs, sliced
150g cheddar cheese, cut in strips (about 1/2 inch thick)

Procedure:
1. Marinate the beef in soy sauce and lemon juice for at least 1 hour
2. Place the beef in a flat surface and arrange the hotdogs, pickle, carrot, cheese, and egg on one side
3. Roll the beef enclosing the fillings and tie with a cooking string to ensure that the meat will not open-up
4. Place cooking oil in a pan and apply heat
5. Dredge the rolled beef in flour and fry until the color of the outer part turns medium brown
6. Transfer the fried rolled beef in a casserole and pour-in the beef broth then bring to a boil
7. Pour-in half of the soy sauce-lemon juice marinade,salt and simmer until the beef is tender.

Here's Idol sa Kusina Recipe for Episode 121/Dec. 15, 2013- CHICKEN PASTEL.

Ingredients:
  • 1 1/2 kilo chicken, cut in pieces
  • One can (14 ounces) Vienna sausage, sliced
  • 3 potatoes, diced
  • 1 carrot, diced
  • 1 up mushrooms, cut in half
  • 1 green bell pepper, sliced in strips
  • 1/2 cup sweet peas
  • 1 onion, minced
  • 1/4 cup grated cheese
  • 1 cup margarine
  • 2 cups chicken stock (broth)
  • 4 tablespoons soy sauce
  • 1 lemon extract (juice)
  • 1 egg, beaten
  • Salt and pepper to taste

Pie Crust:
2 cups flour
1/2 cup corn oil or vegetable oil
1 teaspoon salt
1/4 cup of water

Chicken Pastel Cooking Instructions:
1. In a bowl, marinate chicken lemon juice and soy sauce for an hour.
2. In a skillet, melt margarine and brown chicken, set aside.
3. Saute onion, bell pepper an mushrooms then add chicken broth. Simmer for 15 minutes then add potatoes, carrots, sweet peas, sausages and grated cheese. Continue cooking for 10 minutes. Salt to taste.
4. Transfer to a baking dish.
5. Pre-heat oven to 450 degrees Fahrenheit.
6. On a bowl, combine the flour, salt, cold water and oil. Mix into a ball.
7. On a flat surface, roll flat the pastry and cover the chicken pastel mixture and seal the sides by pressing on the edges. Remove excess pastry.
8. Punch small holes on the pastry to let out steam during baking then brush with beaten egg.
9. Bake until golden brown (about 15 minutes).

Procedure:
1.Ibabad ang mga hiniwang baboy sa toyo at asin sa loob ng 30 minuto. Iprito.
2. Pagsamahin ang harina at cornstarch.
3. Ilubog ang marinated pork sa binating itlog at cornstarch mixture.
4. Iprito sa loob ng 10 minuto hanggang sa maging golden brown.
5. Sa hiwalay na kawali, pakuluin ang sweet and sour sauce sa tubig.
6. Ihalo ang mga gulay.
7. Ihalo sa prinitong baboy. Ihain.

Idol sa Kusina Recipe- Ref Cake

Here's Idol sa Kusina Recipe for Episode 120/Dec. 8, 2013- REF CAKE.

Ingredients:
2 packs of lady fingers (broas)
4 large mangoes, sliced
2-3 cups candied pili nuts
1 can condensed milk
2 packs all purpose cream
1 cup evaporated milk

Procedure:

1. Mix the condensed milk and cream together.
2. Slightly dip lady fingers in a evaporated milk.
3. Place a layer of lady finger at the bottom of a container.
4. Add a layer of mixed condensed milk and cream on top of the ladyfinger.
5. Place mangoes and pili nuts on top.
6. Repeat procedure until you reached the desired. Lastly top with mangoes and pili.
7. Put in a refrigerator, to serve cold.

Ingredients:
  • 100 grams baby shrimps, cleaned
  • 100 grams swahe, peeled
  • 100 grams tahong, removed from shell
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 egg, beaten
  • 1/4 cup water
  • 1 teaspoons salt
  • 1/2 teaspoon ground pepper
  • 1 onion, chopped
  • cooking oil for frying
  • 1 cup bean sprouts 
  • 1 sweet potatoes, peeled and cut into strips
  • Spicy Garlic Vinegar
  • 1 cup white vinegar
  • 1 tablespoon garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 piece chili(siling labuyo), chopped

Procedures:
Part 1
1. In a bowl, combine flour, salt, pepper, egg and water to make a smooth batter. Stir to mix well.
2. Add the seafood, onion, bean sprouts. Mix until seafood and vegetables are well coated.
3. In a frying pan, heat cooking oil and pour about 1/4 cup of the mixture.
4. Deep fry each sides for about 1-2 minutes or until crisp and brown. Drain on paper towels.
5. Repeat until the entire mixture is consumed.
6. Serve hot with spicy garlic vinegar. Enjoy

Dipping sauce:
1. In a bowl, mix all the ingredients for spicy garlic vinegar

Ingredients:
  • 8 pcs airline cut chicken
  • 1 cup soy sauce
  • 1/4 cup honey
  • 1 1/4 teaspoons fresh gingeer, peeled and grated finely
  • 4 teaspoons vegetable oil
  • 2 medium scallions, thinly sliced
  • 1 tbsp oil
  • 1 tsp sesame oil
  • 6 pcs shallots, sliced
  • 1 cup snowpeas
  • 1 pc medim sized carrot, jullienned
  • 1 cup beansprouts
  • 1/3 cup vinegar
  • 2 tbsp toasted sesame seeds
  • salt and black pepper to taste

Procedure:
1. In a pan, boil soy sauce and honey. Add ginger and set aside.
2. Season chicken breast with pepper and brown both sides in hot pan.
3. When browned, pour the rest of the teriyaki sauce and simmer until chicken is done. Set aside.
5. For the vegetable stir fry, heat oil in a pan and saute all the vegetables and add vinegar, sesame oil and sesame seeds.
6. When chicken is cooked, place chicken ontop of the vegetables and serve with some teriyaki sauce on the side.

Ingredients:
  • 400g fillet of fish
  • salt and pepper to tase
  • 1 pc lemon, juiced
  • 1 cup flour for dredging
  • Batter:
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tbsp garlic powder
  • 1 1/2 cup water
  • 1 1/2 tbsp fresh parsley, finely chopped
  • Oil for deep frying
Dips:
  • Tomato Dip:
  • 2 pcs tomatoes
  • 1/2 red onion
  • 2 cloves Garlic
  • 1/2 fresh basil leaves
  • 1 tsp Chili flakes
  • 2 tbsp Olive oil
  • Salt and pepper to taste

1. Place everything in a food processor and serve

Cream Based
1/2 cup Cream cheese
1 cup All purpose cream
Salt and pepper to taste
1/2 tsp Cumin
1/2 tsp Garlic powder
1/3 cup Cilantro
2 tbsp Lime juice

1. Place everything in a bowl, mix well and serve.

Vinegar Based
3/4 cup white vinegar
1 pc lemon, juiced
Salt and pepper to taste
2 shallots, sliced
2 cloves Garlic, sliced thinly
1 pc Finger chili, sliced
Spring onions, chopped
1 tbsp patis

Place everything in a bowl, mix and serve.

Procedure:
1. I-debone ang pecho at paa ng manok.
2. I-flatten at i-marinate ang manok sa brown sugar, pineapple juice, toyo, asin at paminta sa loob ng dalawa hanggang tatlong oras.
3. I-layer ang carrots, pickle, sausage, pineapple sa manok at itali ito para 'di bumukas.
4. I-prito sa mantika ang manok hanggang maging golden brown.
5. Buhusan ng beer.
6. Idagdag ang pineapple juice, laurel, pamintang buo, star anise, broth cubes, asukal at pakuluan ito. 
7. Ihain ang chicken hamonado.

Procedure:
1. Igisa ang bawang at sibuyas. Idagdag ang hiniwang baboy, atay at kikiam.
2. Timplahan ito ng patis at haluin sa loob ng dalawang minuto.
3. Dagdagan ito ng kalahating tasang tubig at hayaang kumulo hanggang sa maging malapot.
4. Ilagay ang broth at muling pakuluin ng 10 minuto.
5. Ilagay ang lomi at pakuluin ng 3 minuto. Dagdagan ito ng cornstarch upang maging malapot. 
6. Kapag luto na ang noodles, patayin ang kalan. 
7. Batihan ito ng itlog bago ihain.

2. Lagyan ng seasoning.
3. Igisa ang bawang at ham bits.
4. Dagdagan ng broth.
5. Lagyan ng achuete powder o achuete seeds.
6. Lagyan ng itlog.

Idol sa Kusina Recipe- BEEF BULGOGI RICE

Here's Idol sa Kusina Recipe for Episode 119/Dec. 1, 2013- BEEF BULGOGI RICE.

INGREDIENTS:
  • 2 Tbsp. soy sauce
  • 1 Tbsp. sesame oil
  • 1 Tbsp. sesame seeds
  • 2 cloves garlic, minced
  • 1 tsp. white sugar
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 250g beef top sirloin, thinly sliced
  • 1/2 carrot, julienned
  • 1/3 cup spring onion, chopped
  • 3 cups cooked rice
  • 1 red bell pepper, strips
  • 1 white onion
  • resealable plastic bag

PROCEDURE:

1. In a large resealable plastic bag, combine soy sauce, sesame oil, sesame seeds, garlic, sugar, salt, black pepper. Place beef, carrots, and onions in the bag; seal, and shake to coat the vegetables and beef with the sauce. Refrigerate for atleast 2 1/2 hours.

2. Remove the meat and vegetables from marinade. Reserve a little marinade.

3. Cook beef in a pan, then add bell peppers and onions. Add about 3-4 tbsp.of marinade and simmer. Then add rice and toss. 

4. Transfer to a plate or bowl and garnish with spring onions and sesame seeds.

Here's Idol sa Kusina Recipe for Episode 119/Dec. 1, 2013- BIBIMBAP.

Ingredients:
  • 3 cups cooked rice
  • 100g beansprouts
  • a bunch of spinach
  • 2 small size of zucchinis
  • 5-7 shitake mushrooms
  • 250g grams of ground beef
  • 1 small carrot
  • eggs
  • 1/3 cup soy sauce
  • 1/4 cup hot pepper paste
  • 1/3 cup garlic, minced
  • 1 tbsp sesame seeds, toasted
  • 1/4 cup sesame oil
  • vegetable oil
  • spring onions for garnish

PROCEDURE:

1. Blanch beansprouts and set aside in a bowl, then season with salt, add garlic and sesame oil. Put in on the platter.

2. Next blanch the spinach for a minute. Then rinse it in cold water a few times and squeeze it lightly, Mix it with salt, soy sauce, minced garlic and sesame oil. Put in on the platter.

3. Saute zucchini in a pan over high heat. When it's cooked, it will look a little translucent. Put it on the platter.

4. Slice shitake mushrooms thinly and saute. Add soy sauce, sesame oil and sugar and stir it for 2 minutes. Put it on the platter.

5. On a heated pan, cooked ground beef. Add minced garlic, soy sauce, sugar, black pepper and sesame oil. Put it on the platter.

7. Cook eggs sunny side up.

8. Put your rice in a big bowl, and arrange all your vegetables and meat. place the sunny side up egg on the center.

9. Serve it with sesame oil and hot pepper paste.

10. Lastly, garnish with spring onions.

Ingredients: 
  • 6 Pcs CDO Ulam Burger Cheesy Beef Patties
  • 1 Pc White Onion (Diced)
  • 3 Cloves Garlic (Minced)
  • 2 Pc Potatoes (1 ½ inch dice & Par boiled)
  • 1 Pc Carrots (1 ½ inch dice & Par boiled)
  • 2 Pc Red Bell Pepper (Dice)
  • 2 Pcs Sili Labuyo (Chopped)
  • ½ Cup Tomato Sauce
  • 1 Tbsp Tomato Paste
  • 1 Cup Green Olives
  • 1 Pc Bay Leaf
  • 3 Cups Beef Stock or water
  • 1 Tbsp Oil
  • Salt
  • Pepper

Procedure:

-Heat pan and oil then lightly brown CDO Ulam Burger Cheesy Beef Patties then set a side.
-On the same pan sauté onion, garlic, bell pepper and sili labuyo for 5 minutes then add in tomato paste. Continue to cook for a minute then add in potatoes and carrots. Cook for a minute then add in CDO Ulam Burger Cheesy Beef Patties, bay leaf, tomato sauce and beef stock simmer for 10 minutes then add in green olives. Season with salt and pepper. Serve with cooked rice.

Sarap with Family Recipe-CDO Idol Cheesedog Brown Mushroom Salpicao

Here's Sarap with Family Recipe-CDO Idol Cheesedog Brown Mushroom Salpicao

Ingredients: 
  • 4 Pcs CDO Idol Cheesedog (Cut into 1 inch diagonal slices)
  • 1 1/2 Cup Brown Mushroom (Sliced)
  • 1 Head Garlic (Chopped)
  • 1 1/2 Tbsp Liquid Seasoning
  • 1 1/2 Tbsp Worcestershire Sauce (Optional)
  • 1 Tsp Paprika
  • 2 Tbsp Oil
  • 1 Tbsp Butter
  • Salt
  • Pepper

Procedure:
- Heat pan and oil then sauté garlic until lightly brown then add in CDO Idol Cheesedog. Cook for about 3-4 minutes or until lightly toasted add in mushroom and cook until mushroom has slightly softened.
- Add in Liquid Seasoning, Worcestershire, Paprika and continue to cook for 2 minutes. Turn off heat then add butter then mix until butter dissolves.
