Unang Hirit Recipe- Vegetable Crispy Fried Noodles

Unang Hirit #KitchenHirit of the day: Vegetable Crispy Fried Noodles with Chef Redd Agustin.

Ingredients:
  • pork kasim
  • atay ng manok
  • chicken breast
  • tubig na may asin
  • dried egg noodles
  • bawang
  • puting sibuyas
  • mantika
  • carrots
  • baguio beans
  • spring onion
  • repolyo
  • kinchay
  • chinese chorizzo
  • cornstarch/harina
  • oyster sauce
  • toyo
  • sesame oil

Procedure:
1. Pakuluan sa tubig na may asin ang atay, manok, at baboy.
2. Kapag lumambot, himayin.
3. Pakuluan ang noodles ng 1-2 minuto at salain.
4. I-prito ang noodles at ilagay sa isang plato.
5. Ilagay ang karne sa ginisang bawang at sibuyas.
6. Ibuhos ang stock at iba pang mga sangkap, lutuin sa loob ng 10-15 minuto.
7. Ilagay ang pinaghalong harina at tubig at antayin maging malapot ang sauce.
8. Ilagay ang ginisa sa ibabaw ng noodles.

Procedure:
1. Iprito ang manok at ang tikoy. 
2. Igisa ang sili, paminta, luya at bawang. 
3. Isama ang mga pang timpla: asukal, hosin sauce at ketchup. 
4. Lagyan ng tubig at pakilagay ang manok at tikoy. Hayaang kumulo.
5. Isama na rin ang manok at tikoy.

Ingredients:
  • buko

  • itlog ng pugo
  • sayote
  • carrot
  • young corn
  • repolyo
  • red bell pepper
  • sitsaro
  • sibuyas
  • bawang
  • oyster sauce
  • corn starch
  • patis
  • asukal
  • paminta
  • mantika

Procedure:
1. Sa isang kawali, igisa ang bawang at sibuyas. 
2. Idagdag ang hiniwang karne at hipon at hayaan itong maging golden brown at maluto.
3. Timplahan ito ng patis at paminta. Pakuluin sa loob ng 2-3 minuto.
4. Dagdagan ng 2 hanggang 2 ½ tubig o broth, oyster sauce at hoisin sauce. Muling pakuluin sa loob ng 2-3 minuto.
5. Ihulog ang mga gulay tulad ng young corn, sayote, carrots, green beans at celery.
6. Kapag malambot na ang mga unang gulay, dagdagan ito ng sitsaro, repolyo, bell pepper, dahon ng celery, itlog ng pugo at buko. 
7. Timplahan ito ng asin at dagdagan ng corn starch upang maging malapot ang sabaw.

Procedure:

1. Prituhin ang tokwa.
2. Ihalo ang tokwa sa ginisang bawang, sibuyas at luya. 
3. Ilagay ang hugas na bigas at lagyan ng tubig.
4. Ilagay din ang tanglad.
5. Pakuluan hanggang maluto ang bigas.
6. Budburan ng asin at painta.
7. Idagdag ang malunggay.

Idol sa Kusina Chinese New Year Recipe- Steamed Lapu-Lapu with Tofu

Pandagdag sa ating Chinese menu itong Steamed Lapu-Lapu with Tofu. Tradition na ang laging paghahain ng fish sa hapag, kahit for display lang. Pero itong ginawa ni Chef Boy--sobrang sarap kaya malamang hindi ito magtatagal bilang display! Narito ang ingredients:

  • 1 pc lapu lapu, whole, cleaned
  • 2 packs tofu, sliced
  • 1 piece Chinese sausage, chopped
  • 3 pieces Chinese mushrooms, steeped in hot water then sliced
  • 1 stalk leek, sliced
  • 2 thumbsized ginger, sliced
For the sauce
  • 1 tablespoon oil
  • 2 pcs garlic, minced
  • 2 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 1 tablespoon chili garlic sauce
  • 2 tablespoons gin
  • 1 cup chicken stock
  • 1 tsp cilantro, roughly chopped
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • leeks or fresh cilantro for garnish

Idol sa Kusina Chinese New Year Recipe- Sirloin Beef

Beef naman ang susunod na recipe ni Chef Boy for his next Chinese New Year dish. Ang oriental dish na ito'y maihahanda niyo na para sa inyong mga pamilya with these ingredients:

  • 500g sirloin beef, cut into thick strips
  • 2 eggs, beaten

Idol sa Kusina Chinese New Year Recipe- Chinese Shrimp Balls Salad With Rice Sticks

This week na ang Chinese New Year! Bilang parte ng celebrasyon, naghanda si Chef Boy kahapon ng apat na recipes na pwedeng-pwede nating gawin sa bahay. 

Isa dito ay ang Chinese Shrimp Balls Salad With Rice Sticks. Gusto niyo rin ba itong subukan? Narito ang ingredients:
  • 300g medium shrimp, peeled and deveined
  • 1/2 cup canned water chestnut slices
  • 1 tbsp spring onions, chopped
  • 1/2 teaspoon grated ginger
  • 2 teaspoons soy sauce
  • 1 teaspoon rice wine
  • 1/2 teaspoon sugar
  • 1/4 teaspoon sesame oil
  • ground black pepper, to taste
  • 1 egg white
  • 3 teaspoons cornstarch, or as needed
  • 1 head red and green lolo roso
  • 1/3 pc carrot, julienned
  • 1 cup cherry tomatoes

Unang Hirit Recipe- KBL (Kadyos, Baboy at Langka)

Here's Unang Hirit Kitchen Hirit of the day: KBL (Kadyos, Baboy at Langka) with Chef Chef Jude Trogani.

Ingredients:
  • karneng baboy
  • langka
  • kadyos
  • kamote
  • batuan puree
  • tanglad
  • pork cube

Procedure:
1. Ibuhos ang tubig sa kaserola. Lagyan ng kaunting asin.
2. Pakuluan ang baboy at hayaang kumulo ng limang minuto.
3. Ilagay ang tanglad, sibuyas and pork cube. Pakuluan sa loob ng 40 minuto.
4. Ilagay ang kadyos. Iluto sa loob ng 20 hanggang 25 minuto.
5. Ilagay ang batuan fruit/puree at isama ang asin, paminta and langka. Iluto sa loob ng 10 minuto.
6. Idagdag ang talbos. Takpan at patayin ang apoy.
7. Ihain.

Binurong Kanin
  • 1. Hugasan at linisin ang mga isasahog na isda o hipon.
  • 2. Asinan at itabi sa loob ng dalawang oras.
  • 3. Pagsamahin ang kanin at ang napiling sangkap sa isang garapon.
  • 4. Iimbak ito sa loob ng 7-10 araw. 
  • 5. Sa isang kawali, igisa ang buro sa bawang, sibuyas at kamatis.

1. Ibilad ang natirang kanin.
2. Ibusa ang binilad ng kanin sa mantika.

1. Igisa ang sibuyas. Idagdag ang bawang at dahon ng laurel.
2. Ilagay ang beef shank at iprito ng bahagya.
3. Pakuluan ang beef shank hanggang lumambot.
4. Itabi ang beef shank.
5. I-blanch ang pechay sa sabaw ng baka.

Mushroom Gravy 

Ingredients:
butter/margarine
harina
cream style corn
button mushroom
toyo o liquid seasoning 

Procedure:
1. Ilagay ang butter.
2. Dahan-dahang ilagay ang harina.
3. Ilagay ang cream style corn at haluin.
4. Ilagay ang sliced mushroom at isang tasang sabaw ng baka at haluin hanggang sa lumapot.

1. Iprito ang hiniwang patatas at bangus.

4. Hayaang kumulo sa loob ng 3-5 minuto.
5. Idagdag ang prinitong patatas at bangus. Pakuluan muli.
6. Idagdag ang bell pepper, asin at paminta.

Idol sa Kusina Recipe- PINATISANG PATA

Here's Idol sa Kusina Recipe for Episode 125/Jan. 19, 2014- PINATISANG PATA.

Ingredients:
1 pork leg, parboiled and cleaned well
1 head garlic, pounded and mashed
1/4 cup patis (fish sauce)
1 cup vinegar
1 cup water
2 pieces bay leaf
1 teaspoon black peppercorns

Procedure:
  • Combine pork leg, garlic, patis, vinegar, water, bay leaf, and black peppercorns in a pot. Boil then cover and simmer for 1 hour.
  • Adjust seasoning then cover and simmer for another hour or until the meat is almost falling off the bones. Serve.

Ingredients:
  • 6 pc saba
  • 1 cup sugar
  • 2 cups water
  • 1 tsp vanilla extract
  • 2 cups cooked sago

Procedure:

Boil water and sugar in a pot, add saba and cook. Set aside to cool.

In a bowl, place minatamis na saging and cooked sago then add the syrup and serve.

Here's Idol sa Kusina Recipe for Eisode 125/Jan. 19, 2014- GINATAANG ALIMASAG.

Ingredients:
  • 3 tbsp oil
  • 4pcs garlic, pounded
  • 1 thumb sized ginger, sliced and pounded
  • 4 pcs finger chili, sliced
  • 2 stalks lemongrass, pounded and tied
  • 2 tbsp bagoong
  • 3 cups coconut milk
  • patis to taste 
  • 4-5 pcs alimasag
  • 4 cups spinach
  • bunch of cilantro to top

Procedure:

In a large pot, sauté the garlic, lemongrass, and ginger.

Add the coconut milk then bring to a boil.

Put in the shrimp paste and fish sauce and cook until the coconut milk is thick.

Add the finger chili and simmer.

Put the crabs in the pot and mix until evenly covered with coconut milk. Simmer until crabs are cooked.

Add the spinach last and transfer to a plate.

Garnish with cilantro. Serve hot

Idol sa Kusina Recipe- SINAMPALUKANG MANOK

Here's Idol sa Kusina Recipe for Episode 125/Jan.19, 2014- SINAMPALUKANG MANOK.

Ingredients:
  • 2 tbsp oil
  • 1 thumb sized ginger, sliced and pounded
  • 1 pc red onion, chopped
  • 3 cloves garlic, crushed
  • 1 kilo chicken, cut into 8 pcs
  • 1.5 L water
  • 3 cups sampaloc leaves, chopped
  • patis to taste
  • pepper to taste

Procedure:

Saute ginger, onion and garlic in a pot. Add the chicken pieces and let the oil of the chicken come out.

Add water and let it boil.

Put in the the sampaloc leaves, season with patis and pepper. simmer until chicken are cooked. Serve hot.

Procedure:
1. Lagyan ng asin at paminta ang tilapia.
2. Iprito ang isda.
3. Itabi muna ang piniritong isda.
4. Magpakulo ng tubig.
5. Ihalo ang sibuyas, bayleaf, star anise, brown sugar, soy sauce, at pineapple juice hanggang ang lahat ng lasa ay maghalo.

Procedure:
1. I-marinate ang karne ng baboy sa toyo, kalamansi, bawang, asin at paminta.
2. Sa isang kaserola, igisa ang bawang at sibuyas sa butter.
3. Ilagay ang mga hiniwang karne ng baboy at timplahan ito ng asin at paminta. Hayaang masakangkutsa nang maigi.
4. Lagyan ito ng tubig kung kinakailangan hanggang sa lumambot ang karne.
5. Kung malambot na ang karne, ilagay na ang patatas, carrots at red bell pepper. Takpan muli hanggang sa maluto ang patatas.
6. Huling ilagay ang all-purpose cream, vienna sausage at pasas.

  • 1 pack all-purpose cream
  • 1/4 cup condensed milk

Procedure:
  • Prepare gelatin according to package directions, but add sugar and pandan flavoring.
  • Transfer to a square glass dish and set aside.
  • When gulaman sets, cut into cubes. Then, combine with coconut, cream and milk. Chill and garnish with pandan leaves.

Here's Idol sa Kusina Recipe for Episode 124/Jan. 12, 2014- Nilagang Baka with Fish Sauce Dip, Tajore Mansi Dip and Ensaladang Talong.

NILAGANG BAKA
  • 500g beef shanks, cut into serving parts
  • 500g beef tendons
  • 2 medium potatoes, peeled and quartered
  • 1 small onion, peeled and quartered
  • 1 tsp pepper corn
  • 1/2 cabbage, cut into wedges
  • 80g bagiuo beans
  • 1 tablespoon fish sauce
  • 2L water
  • salt to taste

Procedure:
  1. In a pot, combine beef shanks, beef tendon and enough water to cover. Over medium heat, bring to a boil, skimming scum as it rises to top.
  2. Once broth clears, add onions, pepper corns and fish sauce. Lower heat, cover and cook at no more than a simmer for about 2 hours or until shanks and tendons are soft. 3. Add more water as needed. Add potatoes and cook for about 5 minutes. Add green beans and cabbage and cook for a few minutes until vegetables are tender.
  3. Season with salt to taste. Serve hot.
FISH SAUCE
  • 1/4 cup fish sauce
  • 1pc lime juice
  • 1/4 lime rind
  • 1pc labuyo, chopped
Combine everything in a bowl and serve.

TAJORE MANSI
Ingredients
  • 1/8 tbsp tajore, mashed
  • 1/4 cup vinegar
  • 3 tbsp calamansi
  • 2 tablespoons ginger, grated
  • 2 tablespoons spring onion, chopped
  • 2 teaspoon sugar
  • 1 teaspoon sesame oil
Combine everything in a bowl and set serve.

ENSALADANG TALONG
2pcs eggplant, grilled and skin peeled
2 cloves garlic, minced
2 pcs calamansi
patis to taste
pepper to taste

Mash the eggplant, add garlic and season with patis, calamansi and pepper.

Idol sa Kusina Recipe- Inihaw na Liempo at Hito with Vinegar, Soy dip and Atchara

Here's Idol sa Kusina Recipe for Episode 124/Jan. 12, 2014- Inihaw na Liempo at Hito with Vinegar, Soy dip and Atchara.

INIHAW NA LIEMPO AT HITO
  • 350g pork liempo, boneless
  • salt and pepper to taste
  • 6 pcs calamansi
1. Season liempo with salt, pepper and calamansi.
2. Grill pork until done, do not overcook.

VINEGAR SAUCE:
1 cup sukang iloko (cane vinegar)
1 pc labuyo, chopped
2 cloves garlic, minced
pepper to taste
salt to taste
spring onion, chopped

Combine everything in a bowl and serve.

SOY DIPPING SAUCE:
1/3 cup soy sauce
1/2 cup tomato ketchup
3 tbsp sugar
1 tbsp calamansi
pepper to taste
1 pc finger chili, sliced

Combine everything in a bowl and serve.

ATCHARA:
2 cups green papaya, strips then mixed with salt and leave for 10 minutes and drain
1/2 cup red pell peppers, strips
1/2 cup carrots, strips
1 red onion, chopped
1 thumb-size ginger, strips
1/4 cup raisins 
1 cup sukang paombong
1 cup white sugar
2 tbsp chili flakes
1 tbsp rock salt

Boil the vinegar, chili and sugar together, then set aside.
Combine papaya with the rest of the ingredients.
Pour the vinegar/sugar mixture and stir.
Store in clean containers and keep refrigerated until ready to serve.

Hito with Buro, Ginisang Bagoong Alamang at Kamias, and Sampaloc dip

2 pcs hito, cleaned
rock salt 

Rub hito with rock salt and grill until done.

BURO
2 tbsp oil
1 pc red onion, chopped
2 pcs tomato, diced
1/2 tsp ginger, sliced
1 cup buro
spring onions for garnish

In a pan, auté onion and tomato. Add buro and simmer.
Garnish with spring onions.

GINISANG BAGOONG ALAMANG WITH KAMIAS
1 cup fresh alamang
6pcs kamias, sliced (reserve half for garnish)
1 pc sili haba, sliced
salt pepper to taste

In a pan, auté sili haba, half of kamias then add fresh alamang.
Season with salt and pepper. Garnish with sliced fresh kamias.

SAMPALOC DIP
6 pcs sampaloc, boiled and juice extracted
2 tbsp sugar
3 tbsp chili garlic
2 tbsp soy sauce
1 tbsp ginger, grated
2 tbsp slurry

In a pan, heat sampaloc juice, sugar, ginger, chili garlic, soy sauce and boil.
Simmer then thicken with cornstarch. Serve.

Idol sa Kusina Recipe for Episode 124/Jan. 12, 2014- Deep Fried Sugpo and Baby Squid with Lemon – Vinegar, Dark Mayo and Pureed Green Mango Ensalada Dip.

FRIED SUGPO AT BABY SQUID
  • 300g prawns, head and skin on, deveined
  • 250g baby squid, cleaned
  • 2 cups cornstarch
  • oil for deep frying
  • salt and pepper to taste
Coat prawns and squid in cornstarch and deep fry in hot oil.
Drain on paper towels and set aside.

LEMON-VINEGAR SAUCE
  • 1 cup white vinegar
  • 1 tsp fish sauce
  • 1pc lemon juice 
  • 1 tsp lemon rind
  • 1 pc red onion, diced
  • 2 cloves garlic, minced
  • 1 pc labuyo, minced
  • 1 tsp sugar
  • 1 tbsp spring onion, chopped
  • 1 tbsp cilantro, chopped
Combine all the ingredients in a bowl. Serve.

BLENDED ENSALADA 
3 pcs tomatoes, diced
2 pcs shallots, diced
1 tbsp fried garlic
1 pc green mango, strips
1-2 pcs finger chili, minced
1 1/2 tbsp kinchay, minced
2 tbsp oil
patis to taste

Place everything in a blender or use a hand blender and pulse until smooth.

DARK MAYO/OYSTER-MAYO DIP
1 cup mayonnaise
2 tbsp oyster sauce
1 tsp sesame oil
pepper to taste
toasted sesame seeds to top

Combine everything in a bowl and top with sesame seeds. Serve.

4. Idagdag ang laman ng buko at spring onion.

Idol sa Kusina Recipe- Corned Beef Sotanghon

Ingredients:
  • olive oil/mantika
  • puting sibuyas
  • bawang
  • onion leeks
  • mais
  • corned beef (chunky type, unsalted)
  • beef stock
  • dahon ng laurel
  • pamintang durog
  • cabbage
  • sotanghon

Procedure:
1. Igisa ang sibuyas, bawang, onion leeks at mais.
2. Idagdag ang corned beef.
3. Ilagay ang beef stock, dahon ng laurel at paminta.
4. Pakuluan at ilagay ang sotanghon.

Here's Idol sa Kusina Recipe for Episode 123/Jan. 5, 2014- SARDINAS PASTA.

Ingredients:
  • 500g spaghetti pasta, cooked
  • 3 tbsp oil
  • 3 cloves garlic, sliced
  • 1 white onion, chopped
  • 1 cup whole cherry tomatoes
  • 1 tsp chili flakes
  • 1 can chickpea
  • 1 can sardines in tomato sauce
  • cheddar cheese to top
  • spring onion for garnish
  • lemon wedges

PROCEDURE:

1.In a pan, saute onion, whole cherry tomatoes and garlic in little oil.

2. Add chickpeas and chili flakes.

3.Then add sardines with tomato sauce and simmer.

4. Top it over the pasta and add grated cheddar on top. Garnish with spring onions and sliced lemon.

INGREDIENTS:
  • 1 pack pop corn,cooked
  • 1 cup brown sugar
  • ¼ cup butter
  • ½ cup light corn syrup
  • ½ cup sweetened condensed milk
  • salt to taste

PROCEDURE:

1. In a saucepan, cook the brown sugar, butter, and corn syrup. Allow to come to a boil. Add sweetened condensed milk and season with salt.

2. Allow to softly boil and be careful not to burn.
Pour the caramel over the popped popcorn. Mix with a wooden spoon and coat evenly.

Idol sa Kusina Recipe- CHEESY BAKED LUNCHEON MEAT WITH RICE

Here's Idol sa Kusina Recipe for Episode 123/Jan. 5, 2014- CHEESY BAKED LUNCHEON MEAT WITH RICE.

INGREDIENTS:
  • 4 cups cooked rice
  • 1 tbsp margarine
  • 1 tbsp oil
  • 4 tbsp soy sauce
  • 1/4 cup tomato ketchup
  • 1 can green peas
  • pepper to taste
  • 1 can luncheon meat
  • quick melting cheese to top
  • 2 eggs, cooked sunny side up
  • parsley for garnish

PROCEDURE:

1. In a pan, melt margarine in oil and toss rice and green peas.

2.Add soy sauce and ketchup. Mix well amd transfer to a baking dish. Set aside.

3. Pan fry luncheon meat in oil until crispy.
Top over rice, add lots of cheese and bake until melted.

4. Lastly, top with sunny side up eggs and parsley. Serve.

Idol sa Kusina Recipe- CORNED BEEF SINIGANG

Here's Idol sa Kusina for Episode 123/Jan. 5, 2014- CORNED BEEF SINIGANG.

INGREDIENTS:
  • 2 cans corned beef
  • 1 can corn kernels
  • 1 pack sampaloc powder or instand sinigang mix
  • 1 bunch kangkong leaves, cleaned 
  • 1 pc radish
  • 1 bunch string beans
  • 3 pcs finger chili
  • 250 grams gabi
  • 2 medium size tomatoes, chopped
  • 1 red onion, quartered
  • patis to taste

PROCEDURE:

1. Boil water and add tomatoes, gabi, finger chili, onion, radish and sinigang mix.

2.Blanch green vegetables in water with baking soda. And place in ice bath.

3.Place corned beef, in sinigang stock and simmer for few minutes. 

4.Place vegetables in a bowl and pour stock with cornbeef. Serve hot.
